I've been really into jackfruit lately—it's incredibly versatile! From BBQ Jerk Pulled Pork Sandwiches to Vegan Jamaican Ackee & Saltfish and even Meatless Birria Tacos, I've been experimenting with all sorts of dishes. That's how I came up with this Vegan BBQ Jerk Jackfruit Chipotle Burrito Bowl—it's loaded with textures and all your favorite burrito fixings, served in a convenient bowl form!

Sure, making this dish might take a tad longer than swinging by your favorite lunch spot, but trust me, it's worth the effort! This vegan burrito bowl recipe is my go-to for a satisfying lunch or a fuss-free dinner during busy weeknights. I love loading it up with rice, Pico de Gallo, and all the fixings. And when I serve it with frozen margaritas, tortilla chips, and an extra dollop of guac, it's like a little fiesta right at home!

What I adore about this bowl is how customizable it is. It's a blast for the little ones to dig into and explore different flavors. Plus, you can go with regular or vegan cheese—whatever suits your taste! It's become my go-to recipe for Meatless Mondays or whenever I'm aiming for a lighter meal. What Is Jackfruit?

It looks like a giant spiky watermelon --- jackfruit is actually part of the fig family. Originating from Southeast Asia, it holds the title for being the world's largest tree fruit. Its trademark is its prickly green skin. Once it's ripe, it turns super sweet, tasting similar to mango, but when it's unripe it is almost flavorless. You might have spotted it in your local grocery store, typically canned and labeled as young green or unripe jackfruit here in the U.S. This canned version is pretty flavorless, making it perfect for meatless vegan + plant-based savory dishes!

How To Make Vegan BBQ Jerk Jackfruit Chipotle Burrito Bowl

One of the best things about this recipe is that you can prepare all the different elements ahead of time. The plant-based "pulled pork" is versatile and can be used in multiple dishes (keep an eye out for my pulled pork sandwich next!). Plus, you can make the rice, Pico de Gallo, and guac in advance. It's a game-changer for meal prep—especially for us busy mamas!

Ingredients

PLANT-BASED "PULLED PORK":

  • Young jackfruit. You can find this in a can, be sure to drain + rinse.
  • Extra virgin olive oil. Feel free to use your favorite high-quality EVOO. My fave tried and trusted brand is California Olive Ranch.
  • Jerk seasoning.  Store-bought or homemade
  • Browning sauce. Browning sauce combines brown sugar + hot boiling water to form a syrup-like sauce that helps enhance the other flavors.
  • Jamaican green seasoning. See the recipe here!
  • BBQ sauce. If you choose to use a store-bought version, my favorite brand is Stubb’s BBQ Sauce. However, see my Homemade BBQ Sauce recipe for a delicious option!
  • Vegetable stock. I love using an organic vegetable stock!
  • Jerk sauce/marinade. Homemade or store-bought. See below for how to make your own.

BURRITO BOWL:

  • Cooked rice. You can use BrownCoconut, or Basmati rice.
  • Romaine lettuce. You can sub with kale, spinach, or arugula, etc.
  • Pico de Gallo. You can also sub with chopped tomatoes.
  • Cooked black or pinto beans. I use canned beans and heat them up on the stove.
  • Shredded vegan shredded cheese. Use your favorite dairy-free cheese i like Daiya or Miyokos.
  • Red onions. Chopped.
  • Bell pepper. Adds a nice sweet + crunchy element.
  • Guacamole. You can also use diced avocado or make your own guac!
  • Hot sauce or Sriracha. Optional.

How To Make Homemade Jerk Sauce

This homemade jerk sauce truly elevates the jackfruit with its incredible flavor! Here's how to whip it up:

FOR THE HOMEMADE JERK SAUCE:

  • 3 scotch bonnet peppers
  • ½ red onion, chopped
  • 4 garlic cloves
  • handful of scallions (aka green onions)
  • 2 Tbsps white vinegar
  • 1 teaspoon salt + black pepper
  • 1 tablespoon minced fresh ginger
  • 2 Tbsps brown sugar
  • 1 carrot, peeled + chopped
  • ¼ cup soy sauce
  • 2 Tbsps pimento seeds (aka allspice)
  • ¼ cup filtered water

Simply add all ingredients to a high-powered blender and blend until smooth. Voila!

Definitely! While the ingredients in this vegan burrito bowl are perfect as is, I wanted to share a few more ideas of ingredients that you can add in case you make this bowl more than once and want to switch things up!

This is a great recipe to mix and match the ingredients/toppings. For added nutrients, fiber, and color, add your favorite veggies + protein.

Can I Make This Bowl Into A Burrito?

Absolutely! You can easily transform this bowl into a delicious burrito. Simply spoon the prepared ingredients onto a large corn or flour tortilla, add your favorite toppings, fold in the sides, and roll it up tightly. Then, wrap it in foil for easy handling and enjoy your tasty burrito on the go or at home!

NOTE: Keep in mind that flour tortillas are more stretchy, making them particularly convenient for stuffing with generous fillings. If you're feeling adventurous, you can always make your own tortillas--- then you can control the size.

Can I Use Another Grain Instead of Rice?

Yes, you can definitely use another grain instead of rice in this recipe to add variety + flavor. Quinoa, barley, farro, or bulgur would all be excellent alternatives. Simply cook the grain according to package instructions and use it as a base for your burrito bowl

What if I can't find Jamaican seasonings

If authentic Jamaican seasonings (i.e. browning, Green seasoning, etc.) aren't readily available near you, they are available for purchase on Amazon. Otherwise, substitute with your favorite brand. 

Can I use a different oil?

If you'd like to use an alternative to olive oil, you can also use melted vegan butter, avocado oil, coconut oil, or grapeseed oil.

Can i adjust the spices + spice level?

If desired, you can reduce the amounts slightly. Please know that this recipe is bold in flavor, so feel free to adjust based on your tastebuds.

Can i use canned jackfruit?

Absolutely! Canned jackfruit is what I use.

Can jackfruit be eaten out of the can?

Yes, the canned jackfruit is perfectly safe to eat straight out of the can, but it tends to taste best warm and with seasoning. 

Can i use whole jackfruit instead of canned?

Of course! You can also sub with whole UNRIPE jackfruit by removing the core/seeds and prepping the same way once chopped. TO PREP: Run a oiled paring knife along the core to separate it from the fruit pods. Pull out fruit pods and remove the white fibers and tips. Cut pods in half lengthwise; remove the jackfruit seeds and their rubbery skins. From there, cut the jackfruit into whatever size pieces you need for the recipe.

Ingredients

PLANT-BASED "PULLED PORK":

  • 2 cans young jackfruit, drained + rinsed
  • 2 Tbsps Extra virgin olive oil
  • 1 tablespoon jerk seasoning
  • 1 tablespoon browning sauce
  • 2 tsps Jamaican Green Seasoning
  • 2 cups BBQ sauce, store-bought or homemade
  • ½ cup organic vegetable stock
  • 1-2 Tbsps Jerk sauce/marinade

BURRITO BOWL:

  • 1 cup cooked rice (You can use Brown, Coconut, or Basmati rice)
  • 2 cups chopped romaine lettuce (You can sub with kale, spinach, or arugula, etc.)
  • 1 cup Pico de Gallo (You can also sub with chopped tomatoes)
  • ½ cup cooked black or pinto beans
  • ½ cup Shredded vegan shredded cheese
  • ¼ cup chopped red onions
  • 1 bell pepper, chopped
  • 4 Tbsps Guacamole or diced avocado
  • Hot sauce or Sriracha, optional

Instructions

MARINATE THE JACKFRUIT:

  • In a bowl, add the jackfruit along with browning sauce, Green seasoning, jerk marinade, and jerk seasoning, stirring everything together until combined and the jackfruit are coated. Let it sit for 10-15 minutes covered in the refrigerator. NOTE: Best when marinated for at least an hour.

SAUTE THE VEGGIES:

  • In a medium skillet (10-inch) over medium-high heat, add 1 tablespoon of olive oil. Once heated, add the sliced onions and bell peppers, sautéing until tender and softened---about 5-6 minutes. You can add a bit of salt + black pepper, to taste. NOTE: You can cook a little longer for an even softer texture, if desired. Remove from skillet and set aside.

SEAR, COOK, + SHRED THE JACKFRUIT:

  • In the same medium skillet (10-inch) over medium-high heat, add the remaining olive oil. Once heated, add the marinated jackfruit and sear on each side for about 4-5 minutes each or until charred. Add the BBQ sauce and veggie stock and reduce the heat to medium-low and cook for about 10-15 minutes, stirring occasionally.
  • At this point, the jackfruit becomes tender enough to shred slightly with two forks so that it resembles pulled pork. Set aside.

ASSEMBLE THE BURRITO BOWL:

  • To serve, add a spoonful of cooked rice to a low bowl(s), followed by: cooked beans, sautéed onion/peppers, chopped lettuce, cheese, pico de gallo, shredded BBQ Jerk jackfruit "pulled pork", and guacamole. Top with hot sauce or Sriracha, if using.
