EGG MUFFIN CUPS ON A SUNDAY.

Hello There, Everyone! 

Breakfast was full of yummy flavors, both simple & bold! Raspberry pancakes & egg muffin cups to be exact! Usually, Sundays are spent preparing big meals for dinner after church, however, I’ve been spending most Sunday mornings creating tasteful breakfasts/brunches. Personally, breakfast is the one meal of the day that I find to be a bit bland on most days because of the lack of components that can be used. Often times, you’ll eat things like eggs, pancakes, waffles, breads, cereal, oatmeal, smoothies, fruits, bars, etc. And after some time has passed, you may realize that you’re meals have become a bit repetitive, unless you’re an adventurer in food hunting and come up with a new concept each morning! BUT who has that much time? Haha! Anyway, so today, I’ve decided to try egg muffin cups instead of the typical scrambled eggs or omelette. And to my surprise, it was AMAZING! The eggs are much lighter and fluffier and everything marries so well together. In my muffin cups I added spinach, shredded Mexican five cheeses, and topped it with mozzarella cheese. For my pancakes, I did the usual recipe and simply added just a bit of raspberries to the batter to give it a bit of sweetness and crunch. But of course, I made a small raspberry sauce on the top, which was made from frozen raspberries, a tablespoon of lemon juice, and 1 tablespoon of brown sugar. To give it a slight thickness, I added 1 teaspoon of cornstarch to a tablespoon of hot water, stirred it well and then added it to my boiling sauce. WALLAH! Raspberry sauce for my pancakes to give it a bit of tartness to it’s already sweetness.

Lastly, I added a bit of my favorite maple syrup and there you have it! A nicely put together breakfast to start this SOULFUL SUNDAY! Easy Peezy! 

As for the weather, in NYC today, it’s a bit cold and certainly gloomy out! No sun for us today after our run in with some snow yesterday. Just rain and gloom! So my day will be spent in doors with my little guy and big guy! I’ll be working from home later on, so I’m going to ensure that I put in a little [self-care] before then, by reading this new book that I’ve purchased by Wes Moore, entitled “The Work” , watch a bit of Oprah’s Super Soul Sunday, read the Bible, and listen to some music and sit in my zen! I’ve learned that it’s definitely important to start off  the week strongly [mentally], so that the rest of your week is aligned correctly! Well, that’s all for today guys!
