What a weekend!
Between working overtime, cooking, baking, wrapping of gifts, shopping, Mamahood duties, and everything in between, I found myself BEAT! Thankfully, nothing a little nap during the day couldn’t help fix a bit! Haha! Anyway, my Holiday weekend was lovely. I was able to tie up the loose ends on all the last minute rounds, especially when it came to gift wrapping! I was also able to find all the ingredients needed for my baking & cooking for my parent’s dinner! So I decided to try a few new recipes this year and definitely stuck with my “tried & true” ones! It was a day filled with Peppermint sugar cookies! Raisin Oatmeal cookies! Banana Pudding! Sweet Potato Casserole (w/ chopped pecans)! Bacon loaded Mashed potatoes! And Spinach & Ricotta Cheese baked Shells! Yummy! Plus, these were just the dishes that I brought over to my parents.
The feast already awaited at their house of course! Oh & they had a lot of Jamaican dishes (Curry Goat, Oxtail, Rice + Peas, White Rice, Fried Fish, Grilled Shrimp, Salad, Carrot Juice, Wines, & Liquors), which is pretty traditional in a Jamaican household. Just an addition of Ham & Fried chicken was incorporated to bring an “American feel” to the dinner party! It was definitely a FULL house, all with good times + laughter from those you you haven’t seen in a while. That’s truly the meaning of Christmas. “For a child was born that we might have Life and have it more abundantly-JESUS”. So in effect, Christmas should be all about LIFE and LOVE and UNITY, rather than the gifts & decorative craze–although it does add a graceful experience to the whole day. Anyway, one thing I’ve learned this Christmas was that the gifts didn’t really matter as much, although it does create a great feeling of satisfaction for most people. Rather, I learned that the best gift of all is my two favorite guys (Hubby + son), those that love me (family & non-family), health, strength, and the love from God (which is the foundation of all of the other things). Life to me has meaning! A meaning beyond just a day, gifts, symbolisms, etc.
But we must have the courage to be grateful anyway, despite the unfavorable circumstances that some of us may have to face day to day AND even on this day! Because I’ve learned that it could ALWAYS be that much worst.

Remember that it’s about Knowing. Being. And Doing! So as the Holidays come to a close and the New Year arises, keep in mind that it’s not a NEW YEAR without a NEW YOU! There’s No point in looking forward to a NEW YEAR with NEW OUTCOMES, if you’re not willing to take the necessary steps to make it NEW. That my friends, is the challenge! But a Challenge that can be done nonetheless.

LASTLY, This morning’s breakfast was Jamaica’s best dish for the early Rise–Ackee + Saltfish w/ Fried Dumpling. GOODNESS!
