HAPPY NEW YEAR!! HAPPY 2017!
It’s the first day of 2017! Hurray! So, I’ve been viewing everyone’s NYE celebrations, New Years meals/recipes, and even Resolutions! How fantastic! I’m just loving it all! It definitely is exciting to see what this year will bring. Unfortunately, for some, 2016 was a bit of a difficult year, however, I do believe that difficult moments teach us the best lessons about ourselves, God, and the things/people around us. So don’t be discouraged OR by far burnt out! Let your previous lessons better prepare you for your blessings that lie ahead! Now, as you create your resolutions, bucket lists, and goals for the year, just remember that it is possible to achieve the things your desire, even when it starts to feel like the work is overwhelming! Just don’t give up on the work ahead. Keep pushing through!
On a more food note, I decided to create a nice meal to start the New Year off right! I couldn’t decide on spicy, decadent, complex or simple, SO I chose to do it ALL! Haha!!
I made hot wings (which I have not made in a LONG time & truly enjoyed tonight), sautéed shrimp (with dill, lemon, and parsley), and Mac & Cheese from scratch! YuMm! It was GOOD! I do hope that this recipe for the Mac & Cheese serves you well!

Mac & Cheese Recipe
- 1.5 boxes of Shells pasta (OR your favorite pasta!)
- ½ cup butter
- ½ cup flour
- 4 cup milk (I used 2% milk)
- 6 cup freshly shredded sharp or white Cheddar
- 1 tablespoon salt
- 1 teaspoon pepper
- 2 tablespoon butter
- ½ cup panko bread crumbs
Boil pasta in salted water according to package directions. Melt butter in large saucepan over medium heat. Sprinkle in flour and whisk and cook 2-3 minutes. Add in salt and pepper. Slowly pour in 4 cups of milk, whisking until smooth and heating to a low boil until fully thickened.
Remove from heat.
Grease a 9×13″ baking dish and add the hot pasta to the dish. Over the top sprinkle 6 cups of freshly shredded cheese.
Pour the thickened cream sauce over the hot pasta and cheese and let it sit until the cheese melts. Stir everything together.
Melt 2 tablespoons of butter over medium heat. Add in panko bread crumbs, stirring constantly 3-5 minutes or until golden brown.
Pour over the mac and cheese.
Bake in a preheated 325 degree oven 12-15 minutes OR until top is more golden brown.
