Just to update you, I’m feeling much better today and so is my hubby, so I guess my at-home remedy did work! Haha!
So as a little mini celebration, I decided to finally try my hand at pancakes from scratch. Usually, I would just throw some pre-made box pancake mix in with some water and wallah! But this morning, I made my pancakes from scratch and I must say—IT’S SO MUCH BETTER! It’s fluffier, lighter, and the taste is much bolder! LOVE, LOVE, LOVE! Definitely throwing those pancake box mixes out after this! Haha!
Have you made your pancakes from scratch?
- Combine flour, salt, baking powder and sugar together in a large bowl; make a well in the center of mixture.
- Combine egg, milk, softened cream cheese, butter and vanilla, stirring well. Add to dry ingredients, until well combined. Add the small cubes of cream cheese and stir to mix in.
- Pour 1/4 cup batter (or less) for each pancake onto a greased griddle (OR skillet) that is on medium heat. Cook pancakes until tops are covered with bubbles and edges appear cooked; turn and cook on other side ( the second side cooks much quicker).
- Serve pancakes with maple syrup, scrambled eggs, and strawberry topping (if desired).
