Today’s dinner is something healthy and full of great veggies for the soul! I decided to make baked Red snapper and paired it with red potatoes, sweet potatoes, green beans, carrots, green bell pepper, onions, tomatoes, and scotch bonnet pepper (for that bit of spiciness!). This was a nice warm meal for this COLD day in NYC.
