Veggie Pizza was on the menu two night’s ago and it was a great addition to my new Vegetarian food journey. Loaded with tons of flavor, nutrients, and super easy and fun to make. This is a great recipe to make on any busy day, with little ones, or just as a fun & simple dish for your weekend!
Don’t mind the extra cheese; honestly, I felt that I could’ve added a lot more if I wasn’t trying SO hard to minimize my cheese intake. Haha.
This version of taco pizza includes flour tortillas, black beans (to substitute for meat), spinach, tomatoes, cheese, onions, green bell pepper, tomato sauce, and seasonings.
Unlike usual pizza, I found this easier to eat with a fork and I added a few minutes to the cook time so that it could be a bit on the crispier side (my preference, really). Although this version is based on my Vegetarian diet, you can still enjoy this by adding your favorite meat (whether that includes turkey meat, beef, chicken, you name it!) instead of beans, which I’m sure will be just as great (if not better for all my meat-lovers!).

Mexican Vegetarian Pizza Recipe
- 1 can black beans (drained)
- 1/2 teaspoon Garlic powder
- 1/2 of an onion (I used purple onion, diced)
- 1 teaspoon Onion powder
- 1 teaspoon Oregano
- 2 Tomatoes (diced)
- 2 cups of spinach (rinsed)
- 1 Green Bell pepper (diced)
- 1 can of tomato sauce
- 1 pinch of Cayenne pepper
- 2 teaspoons Chili powder
- 1/2 teaspoon salt (I used sea salt)
- 1/2 teaspoon Cumin
- 8 Flour tortillas (You can also use corn tortillas if preferred)
- 3 cups of Mexican mixed shredded cheese (OR your own personal favorite)
- 1 tablespoon of cooking oil
- Preheat oven to 400 degrees.
- Add cooking oil to medium-size frying pan on medium-high heat. Once heated, add drained black beans, garlic powder, onion powder, oregano, cayenne pepper, chili powder, salt, and cumin.
- Stir together well and reduce heat to low and let simmer for 10-15 minutes, stirring occasionally so that beans don’t stick to bottom of pan.
- In a separate medium pot, add tomato sauce and spinach and let simmer for 5 minutes. Add a pinch of salt for taste.
- Remove both beans and tomato sauce from heat and let cool a bit.
- Prepare baking sheets by spraying with cooking spray. Then add 1 layer of tortilla to baking sheet. Spread black beans to first on tortilla.
Then top beans with a handful of cheese, then 2 tablespoons of tomato sauce/spinach mixture (be sure to save 1/4 cup for next step.
Next, add 2nd layer of tortilla and brush with tomato sauce/spinach mixture. Add onions, tomatoes, and green bell pepper to top layer in any way or amount pleasurable.
Finally, add remaining cheese until completely covered. Repeat until all pizzas are created.
Place in oven for 8-12 minutes. Let it stay for an extra 5 minutes for extra crispy.
Remove from oven and serve immediately. Can be garnished with fresh Parsley if desired and sliced accordingly.
