Hi. I made this for the 1st time today, but I used all purpose unbleached flour as I didn't have artisan flour. I didn't make any other changes, followed the recipe to the letter, but it was more 'stiff' than spreadable. Also, once the time was up, my bread stayed the size as it went in the pan. It did not rise at all. The top was rather hard and crunchy (I didn't over-bake it) but the centre was more 'bread' like. Otherwise, it smelled delicious while baking and was tasty. I didn't use a mixer, but did it by hand. Is this how it should be? Thanks as I want to try again.
