These Herb Roasted Tomatoes are a burst of flavor that’ll liven up any meal! Imagine juicy tomatoes caramelized in the oven, seasoned with your favorite herbs, garlic + a drizzle of olive oil. They’re super simple to make but bring so much goodness to the table—perfect as a side, tossed with pasta, on pizza, or even piled onto toast. The possibilities are endless! I whipped up this Herb Roasted Tomatoes recipe because, honestly, I can never get enough of that deep, caramelized tomato flavor. It’s my little trick for turning basic tomatoes into something fancy without much fuss! They’re my go-to for busy days when I want to add a pop of flavor to meals without spending hours in the kitchen.
Plus, they’re perfect for so many things—tossing into a quick salad, mixing into pasta, topping pizza, burgers + sandwiches, blending into soups, adding to dips and charcuterie boards, or just sneaking a few straight off the baking sheet (guilty!). Seriously, they’re so versatile!
You can make these in batches and store them in the fridge to easily add to your favorite dishes. They’re easy to make and mostly hands-off, but the flavor is out-of-this-world good.
The key for this recipe is to start with great-quality tomatoes. Choose a mix of large and cherries, and several different colors if you can find them.
I like to roast my tomatoes in a hot oven until they blister and become sweet. The heat from the oven caramelizes the outside of the tomato and enhances its natural sugars, much like how caramelized onions become sweet after cooking.
Just toss everything into a bowl, mix to create your seasoning blend, and you’re set! You can even make extra to keep on hand for next time or to use in other recipes.

Smaller tomatoes, like cherry or grape tomatoes, are ideal for roasting because they caramelize quickly + evenly. However, you can also use larger tomatoes, such as Roma or vine-ripened varieties. Just keep in mind that larger tomatoes will need a bit more time in the oven to achieve that perfect roasted flavor and texture. Adjust your roasting time accordingly to ensure they come out just right!
All leftovers (once fully cooled) can be stored in an airtight container and refrigerated for 3-4 days.
Absolutely! Feel free to swap in your favorite herbs. Basil, thyme, rosemary, oregano, or even a mix of dried Italian seasoning works beautifully.
For a kick of heat, add some red pepper flakes or a drizzle of hot sauce before roasting.
No peeling is necessary! The skins get beautifully caramelized in the oven and add extra texture and flavor.
Basically, the difference is that fire roasted tomatoes are charred (until blacked flakes form) over a flame, then diced and canned. This recipe can easily be turned into fire roasted tomatoes by heating your oven to 450 degrees and keeping them in the oven a bit longer until fully charred. In addition, you can omit the herb seasoning and just add garlic and onion powders for a more traditional taste.

Hi! I made this last year and we loved it! Going to make it again but I forgot that the recipe called for minced garlic cloves. Won’t the garlic burn cooked at that high temp if it is minced ?

Oh my God! I have now made these tomatoes too many times to count! They are so freaking good. I put them in anything that calls for tomatoes and it makes the food sing. Hi Merissa! OMG! I'm so thrilled that you've been loving this recipe! I definitely use them in SO many dishes also! They're such a nice touch! Personally, I haven't stored them in the freezer because I never have that much (haha), but I do believe that they work just as great frozen as other veggies. Plastic freezer bags work great to freeze leftover roasted tomatoes (once fully cooled). Make sure you push all of the air out before sealing to help them stay fresh. 🙂
