This seafood recipe unfolds in two steps: first, cooking the jerk lobster tails to perfection, and then diving into preparing and seasoning the orzo. I like to use my own Homemade Jerk Dry Rub Seasoning for the best customizable flavor.

BBQ JERK LOBSTER:
Lobster tails. You can find these at your local seafood market. If you're using frozen lobster, be sure it's defrosted first.
BBQ sauce. Make your own or use a premium store-bought sauce
Jerk seasoning. You can opt for homemade following my jerk seasoning recipe or use your favorite store-bought one!
Unsalted butter. Make sure it's softened. (See dairy-free option below)
CREAMY GARLIC HERB ORZO:
Dry orzo pasta. Original or multicolor works well.
Water. You can also use veggie or seafood stock for extra flavor.
Garlic cloves. Fresh garlic adds so much flavor.
Organic heavy cream. Heavy cream enriches your orzo with the best flavor. I love using the brand Organic Valley. (See dairy-free option below)
Parmesan. I recommend using freshly grated parm, not pre-grated, for the best flavor. (See dairy-free option below)
Dried herbs. Dried parsley, basil + oregano
Garlic powder. For an extra hit of garlic goodness.

How To Make Jerk Seasoning
SEASONING BLEND:
1 tablespoon onion powder
1 tablespoon garlic powder
2 tsps cayenne pepper
2 tsps black pepper
2 tsps dried thyme
2 tsps organic brown sugar
1 teaspoon ground allspice
1 teaspoon dried parsley
1 teaspoon smoked paprika
½ teaspoon red pepper flakes
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground cloves
¼ teaspoon cumin powder
TO MAKE THE SEASONING BLEND:
In a bowl, mix together the onion powder, garlic powder, cayenne pepper, black pepper, thyme, brown sugar, allspice, parsley, smoked paprika, red pepper flakes, cinnamon, nutmeg, cloves, and cumin until combined.
Store seasoning blend in a tightly sealed mason jar or seasoning jar at room temperature.

Don't be intimidated to cook lobster at home. It's easier than you think! In fact, lobster is easier to cook than fish in some ways because it has a natural barrier, the shell, that protects the tender meat inside from overcooking.
Keep these tips in mind when cooking your lobster + orzo:
Use a lobster cracker to crack open the tails. If you don't have one, you can use a pair of kitchen shears to cut a line up the center of the tails. Then gently pull the meat out of the shells so it rests on top. The meat will remain attached to the shell, but exposed for searing.
This is a very flavorful dish, with lots of seasoning. If you prefer a more mild flavor, you can reduce the amount of spices + herbs.

How To Cook Herb Orzo
In a medium 10-inch skillet over medium-high heat, add the orzo and water (or stock if using), stirring until everything is combined.
Let everything boil for a minute or so before reducing heat to simmer for about 20-25 minutes. During the final 5 minutes, add the garlic cloves, heavy cream, and herbs + seasonings, stirring to incorporate.
Once the orzo swells and the liquid reduces, add in the grated parmesan, stirring again to incorporate. Let everything cook for another 1-2 minutes and remove from heat.
To serve, spoon the orzo into your prepared plate(s) or bowl(s) and top with BBQ Jerk lobster tails.

TO MAKE THE BBQ JERK LOBSTER:
Preheat your oven to 400 degrees Fahrenheit and lightly grease a 10-inch or 12-inch oven-safe skillet.
In a bowl, add the BBQ sauce and jerk seasoning, mixing together until combined.
To prep lobster tails, cut each tail directly in half down the middle so that they lay flat. Repeat until all tails are halved.
Place each flattened lobster tail in the prepared skillet, side by side and brush with melted butter. Spoon half of the BBQ jerk sauce atop each tail and bake for bake everything for 15-20 minutes or so---until the tails turn a bright pink color. NOTE: In the last 5 minutes, spoon the remaining BBQ jerk sauce atop tails.
