Ingredients
Here is everything you need to make this delicious hot honey chicken sandwich:
CRISPY CHICKEN:
Chicken breasts. The star of the show. I like to use organic chicken for the best flavor and quality!
Organic eggs. Acts as a great binder for the wet marinade when coating chicken.
Almond milk. You can use your fave plant-based milk or regular cow's milk.
All-purpose flour + cornstarch. Helps adhere the breading to the chicken and creates a light, crispy crust when cooked.
Organic cornflakes. Adds an extra layer of crunchiness to the breading, elevating the texture!
Breadcrumbs. Feel free to use homemade or store-bought. They provide a crispy and textured coating to the chicken, adding a satisfying crunch.
SAUCE:
Butter. I recommend unsalted.
Hot honey. Store-bought or homemade, if opting for store brought my favorite is Mike's Hot Honey
Hot sauce. Optional (Adjust based on desired spicy level)
Smoked paprika. Adds a nice smoky flavor.
Garlic powder. This adds another level of umami deliciousness to the hot honey sauce.
SANDWICHES:
Burger buns. Toasted (brioche, potato, or hamburger buns work!)
Bread & butter pickles or dill pickles. Optional; can also use sweet relish or pickled onions.
Vegan ranch sauce. You can use homemade or store-bought, you can also use regular ranch.

Pre-heat the oven to 400 degrees Fahrenheit and prep a large baking sheet lined with parchment paper.
In a large bowl, add the chicken breasts (cut into sandwich sized pieces by trimming ends) and 1 TEASPOON OF EACH: sea salt, black pepper, garlic powder, smoked paprika, onion powder, thyme, basil, oregano, and dried parsley, tossing everything together until well coated. Let it sit for 5-10 minutes so that everything marinates. NOTE: It's always best to marinate overnight in the fridge.
In a bowl, add the milk and beaten egg and whisk together until combined.
TO MAKE THE BREAD COATING:
In a separate large bowl, add the crushed corn flakes, breadcrumbs, and remaining 1 teaspoon of seasonings together and stir until combined.
In a separate bowl or plate, mix together the cornstarch and flour.
ASSEMBLE + BAKE:
Now, dip one chicken breast into the flour mixture followed by the milk mixture (shaking off any excess) and then add it into the breadcrumb coating mixture-----tossing it around until breast is well coated. Then lay the chicken breast unto the prepared baking sheet. Repeat until all chicken breast are coated.
Lightly brush or spray tops of chicken with olive oil or cooking spray and bake them for 25-30 minutes or until chicken breast has fully cooked through.
TO MAKE THE HOT HONEY SAUCE:
In a medium 10-inch skillet over medium-high heat, add the butter and let it melt. Next, add the hot honey, cayenne peppers, chili powder, smoked paprika, and garlic powder, stirring everything together until sauce becomes smooth and thick.
Spoon the hot honey sauce atop each chicken breast at the 20 minute mark and continue to bake until cooked through and the sauce has "baked on".
Remove from oven.
TO MAKE THE SANDWICHES:
For each sandwich, take one side of the bun and add a cooked hot honey crispy chicken breast followed by pickles and a few spoonfuls of vegan ranch sauce/dressing. Then top with remaining side of bun. Repeat for all sandwiches.
