I created these because I wanted a breakfast sandwich that combined all my favorite flavors in one bite. Haha. Loved by both kids and adults, this recipe is incredibly versatile, allowing for various ingredient tweaks--With a simple tweak like swapping out bacon for a vegetarian/vegan option or using gluten-free croissants, it easily adapts to different dietary needs.

The Everything Bagel Seasoning craze started at Trader Joe's. It's a mix of sesame seeds, poppy seeds, garlic, onion, and a touch of salt—all the yummy stuff you find on everything bagels. But here's the fun part: it's not just for bagels anymore! People are putting it on everything from salads, avocado toast to sandwiches ---- and you guessed it --- Breakfast Croissant Sandwiches! Once you try it, you'll see why it's become a kitchen must-have!
When it comes to the everything bagel blend, it's all about the sesame seeds. If I'm not using a store-bought version, I definitely enjoy keeping it as original as possible with both white + black sesame seeds. However, you can use one or the other if you don't currently have both. This recipe makes ¼ cup, however, I love making a larger batch (by doubling or tripling the ingredients) and storing it in an airtight container for a longer period of time. To make these breakfast sandwiches vegan, feel free to ensure that the croissants are vegan-friendly as well as substitute the cheese with vegan cheese shreds, bacon for plant-based bacon, eggs with plant-based eggs (I love JUST egg), and butter with vegan butter. Also, be sure to use maple syrup to brush tops of croissants instead of honey.
For the best taste + texture, these sandwiches are best enjoyed fresh shortly after making them.
To prevent soggy croissants, ensure your scrambled eggs are cooked until just set and not too runny. You can also lightly toast the inside of the croissants before assembling the sandwiches.
To make this recipe gluten-free, simply substitute croissants with a GF-friendly version.
While these sandwiches are best enjoyed fresh, you can prepare the individual components such as scrambled eggs and candied bacon ahead of time and assemble them just before serving to maintain their freshness.
Spinach or arugula would be great substitutes for kale in this recipe. You can sauté them lightly before adding to the sandwich for a similar texture.
