That’s where this Andouille Sausage + Peppers Recipe comes in. It’s quick (25 mins only!!), delicious, and perfect for those days when you need weeknight meal a fast!

Ingredients For Andouille Sausage + Peppers

The ingredients are pretty simple, and you can mix and match the sausages if you like. These Andouille sausages add a nice kick that pairs beautifully with the other flavors. Here’s what you’ll need:

SAUSAGE + PEPPERS:

  • Butter. Unsalted is best so you can have better control of the flavor. I am a big fan of the Organic Valley brand!
  • Extra virgin olive oil. Feel free to use your favorite high-quality EVOO. My fave tried and trusted brand is California Olive Ranch.
  • Andouille sausage. I like to use premium organic sausages with come cajun seasonings for the best flavor but you can use whatever is available + you prefer.
  • Garlic cloves. Minced.
  • Bell pepper. I used green + red! Feel free to use a mix of colors like yellow + orange too!
  • Onion. Sliced into moons.
  • Italian seasoning. Either store-bought or homemade!
  • Sea salt + black pepper. To taste.

Ingredients

SAUSAGE + PEPPERS:

  • 1 tablespoon unsalted butter
  • 1 tablespoon Extra virgin olive
  • 1 (12oz.) package cajun-style Andouille sausage
  • 3 garlic cloves, minced
  • 1 green bell pepper, chopped julienne-style
  • 1 red bell pepper, chopped julienne-style
  • 1 onion, sliced into moons
  • 2 tsps Italian seasoning
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper

Instructions

PREP THE SAUSAGE:

  • Prep the sausage by chopping them into rounds or slicing them lengthwise for a "fuller" look/fee.

TO MAKE THE SAUSAGE + PEPPERS:

  • In a medium skillet over medium-high heat, add the butter and olive oil. Once melted snd heated, add the sausage pieces, sautéing on each side for 2-3 minutes or until seared on each side. Add the onions and chopped bell peppers, stirring to combine. Add the salt, black pepper, and Italian seasoning, stirring to combine.
  • Continue to stir as everything cooks and the veggies become tender and charred, about 10-15 minutes.
  • Once the sausage and veggies are cooked through (tender) and seared well, remove from heat.
  • Serve immediately with a side of cooked Basmati rice, Brown rice, Coconut rice, Mashed Potatoes, or your favorite side.
