These Chewy Apple Oatmeal Raisin Breakfast Cookies are just that---soft and chewy! More importantly, these cookies are a notch up from the classic oatmeal raisin flavor. The bold apple flavor creates a nice bit of tartness that works beautifully with the cinnamon spice and sweetness from the raisins.

I remember eating oatmeal raisin cookies growing up and loving the sweetness. I mean I LOVED how sweet these cookies were! Almost addicted to them. Haha. And now, as an adult, things haven't changed. There's nothing like a warm, soft cookie right out the oven, Ya'll. Especially with a glass of milk (coconut or almond milk for me!).

Speaking of milk, I made my own Oat Milk which was so creamy and delish! Definitely an easy, quick way to make your homemade version of a dairy-free milk. Back to cookies----so, I have more of an appreciation for these cookies since I began making them myself from scratch. They're SO much better from scratch. These Chewy Apple Oatmeal Raisin Breakfast Cookies don't disappoint either. I was so happy that my experimenting with flavors worked out awesome!

While apples have a super bold taste (they even peeked out in these cookies when it came to flavor as well), I chose to use them because I knew that they would taste great with the cinnamon spice in oatmeal raisin cookies.

When it came to the baking time, like many other cookies, these bake in less than 15 minutes.

The trick to getting a perfect cookie after they bake is letting them cool for a good 5-6 minutes or so before putting them on a cooling rack to FULLY COOL!

This ensures that they don't break, especially for really soft cookies like oatmeal cookies.

THE METHOD.

OK, so when it came to these cookies, I've recently retried this recipe and made minor tweaks----for the better!

One of those tweaks was the apple incorporation process.

Initially, I diced the apples and added them to the cookie batter, which allowed for there to be medium-sized chunks in each bite.

While these were just as delicious, I decided to change things up by blending the apples into a delicious puree this time around.

Yup. Just a High-powered blender, spices, and a bit of water and wallah.

The perfect amount of apple flavor while keeping the texture of the cookies entirely soft.

Of course, if you don't currently have apples, you can substitute with applesauce.

Let's dig right into this recipe, shall we?

Preheat your oven to 350 degrees Fahrenheit and line two large baking sheets with parchment paper (or a lightly greased cookie sheet) to prevent cookies from sticking and burning fast. Set aside.

Using an electric stand mixer (fitted with a paddle attachment), cream together the softened butter and both sugars on medium speed until smooth, about 2 minutes.

Next, add the eggs and mix on high until well combined (for another 1 minute). Be sure to scrape down the sides and bottom of the bowl if needed.

Finally, add the vanilla extract, pureed apples, and molasses, mixing everything on high speed until combined. Set aside.

Now, in a large bowl, toss together the all-purpose flour, baking soda, cinnamon, and sea salt. Add the dry ingredients to the wet ingredients and mix on low until fully combined.

Add in the rolled oats and raisins, and mix until well combined on low speed.

Chill the dough in the refrigerator for 45-60 minutes (OR you can put it in the freezer for 30 minutes to cut the time in half).

Once time has passed, remove cookie dough from refrigerator or freezer and scoop dough (about 2 tablespoons of dough per cookie) onto the baking sheets, about 1 inch apart. Repeat until pans are filled.

Bake cookies for 11-13 minutes until very lightly browned on the sides. ***NOTE: The centers will look very soft and undone, BUT they are good to go; they'll harden slightly while cooling!***.

Remove cookies from the oven and let them cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely. Repeat until all cookies are made.

Once fully cooled, grab a cookie and enjoy your first bite.

These Chewy Apple Oatmeal Raisin Cookies are just that---soft and chewy! More importantly, these cookies are a notch up from the classic oatmeal raisin flavor. The Apples create a nice bit of tartness that works beautifully with the cinnamon spice.

Ingredients

COOKIES:

  • 1 ½ cups organic all-purpose flour
  • 3 cups rolled oats, GF if preferred!
  • 1-2 Tbsps apple spice puree (See Notes!)
  • 1 cup unsalted butter, room temp.
  • 1 cup organic brown sugar
  • ¼ cup organic cane sugar
  • 2 large organic eggs, room temp.
  • 2 tsps vanilla extract
  • 1 tablespoon molasses
  • 1 teaspoon baking soda
  • 2 tsps ground cinnamon
  • ½ teaspoon sea salt
  • ¾ cup organic raisins

Instructions

Tips & Tricks

  • APPLE PUREE: Begin by melting 3 Tbsps of vegan butter into a medium saucepan on medium-high heat. Add in diced apples (3-4 medium granny smith apples), 1 tablespoon cinnamon, 1 teaspoon nutmeg, ½ teaspoon ginger, and ½ cup brown sugar. Stir until everything is combined. Cook until apples are nice and tender and everything becomes glaze-like, about 7-8 minutes. Remove from heat and carefully add to high-powered blender and blend until smooth. Set aside.
  • STORAGE: Cookies can be stored in a tightly covered container at room temperature for up to 3 days or refrigerated for slightly longer freshness (about 2 weeks). Can be frozen for 4-5 months and reheated to thaw out. Any unused cookie dough batter can be refrigerated for up to 3 days, or frozen for up to 1 month and then thaw overnight in the fridge, if you choose not to use it right away!

  1. These are delicious! I love how the apple is puréed first; my kids don’t like apple chunks in baked goods, so this was the perfect way to still get the flavor of the apple. I also figured I’ll use the leftover apple purée on top of oatmeal!

    I did forget to chill the dough first, so the cookies flattened into one giant flat cookie! 🤦🏽‍♀️ But we all agreed that we loved this recipe.
