How To Make The Best Breakfast Tater Tot Casserole

To get started, lightly grease a medium-sized oven-safe cast iron skillet with butter or cooking spray and preheat your oven to 350°F. Prepare the batter by whisking together the eggs, milk, seasonings, and shredded cheese. Then, just layer your tater tots, pour over the batter, and bake until golden and bubbly!

  • Mild or Sharp Cheddar. Freshly grated or shredded is best!
  • Kale. Chopped!

Ingredients

CASSEROLE:

  • 1 (32 oz.) bag organic frozen tater tots
  • 8 large organic eggs
  • 2 cups Almond milk, unsweetened (You can use your fave plant-based milk or whole milk, if desired)
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 2 cups shredded Mild or Sharp Cheddar, organic
  • 1 cup chopped kale

OPTIONAL ADD-ONS:

Instructions

  • To start, simply lightly grease a medium-sized cast iron skillet (oven safe) with butter or cooking spray and pre-heat your oven to 350 degrees Fahrenheit.

PREPARE THE BATTER:

  • In a large bowl, whisk together the eggs, milk, salt, black pepper, smoked paprika, garlic powder, oregano, and parsley until combined. Add 1 cup of shredded cheese and stir to incorporate. Set aside.

ASSEMBLE + BAKE:

  • In prepared skillet, add the tater tots, spreading them out until even. Evenly sprinkle the chopped kale atop the tater tots followed by the egg batter (evenly pouring to cover). Finally, sprinkle remaining shredded cheese atop everything until covered. NOTE:
  • Bake for 50-60 minutes until the tops are golden and the center is set.
  • Remove from oven and let it rest for 10 minutes before slicing and serving.
