When it comes to desserts, I find that easy and flavorful recipes are the best options (at least for me anyway). I enjoy using different ingredients and putting a slight twist on things to bring out a burst of great flavor after any meal. What is a dessert without the effect of wanting seconds anyway, right? Well, that is definitely this recipe. The other great thing about this recipe as well, is that it is extremely customizable. If you’re not a huge fan of cherries then feel free to use any other type of fruit that you desire such as strawberries, blueberries, blackberries, etc. It will all marry together perfectly with this cheesecake mouse and bits of yellow cake that are the highlights of this dessert!
You can make your yellow cake from scratch if you prefer everything to be homemade or you can save yourself a few minutes by simply purchasing a box of your favorite branded yellow cake mix and baking away! Either way, everything works well together and it still leaves you, your family, and/or guests wanting more. This recipe is definitely a winner in my opinion and with any great glass bowl or jar to serve it in, you can say good-bye to spending your evenings scrambling around the kitchen for great lengths of time after a long’s day of work, trying to find the perfect elegant desert to end your night along with that nice glass of wine (if you choose). So gather your tastebuds and give this recipe a try! It won’t disappoint!
- 2 pint fresh cherries (sliced in halves)
- 1/3 cup granulated sugar
- 1 lemon (juiced)
- One 21 oz. can of cherry pie filling
- Two 8 oz. packs of cream cheese (softened)
- 2 cups powdered sugar (divided into 1 cup each)
- 1 1/2 cups cups heavy cream
- 16 oz container of Cool Whip
- 1 Tbsp vanilla extract
- 1 yellow cake (baked + cut into cubes)
- 1 cup graham cracker crumbs
Bake yellow cake as instructed on cake mix box or make from scratch (if preferred). Let cool once done.
Mix together the sliced cherries with granulated sugar and lemon juice. Stir everything together well and then set aside so that it continues to marinate in the meantime.
Whip together softened cream cheese with powdered sugar and heavy cream.
Add vanilla extract and whip together for 2-3 minutes (using an electric mixer for a better result) until creamy, fluffy and well combined.
Fold in the cool whip into the “cheesecake” mixture (mousse) by hand and DO NOT OVER-MIX.
Reserve the remaining cool whip for the top of the trifle.
Add the cherry pie filling to the marinated cherries and mix well until entirely incorporated.
Lightly pour Graham Cracker crumbs at the bottom of prepared dish and then alternate layers of cubed cake, cherries, and vanilla cheesecake mousse.
Repeat until all ingredients have been used and are uniformed in layers in dish.
Top with the remaining cool whip and garnish with leftover cherries (if desired).
Best if kept Refrigerated for up to 2-3 days.
