It’s no secret that I absolutely adore peaches, and peach cobbler is one of my all-time favorite treats. I love experimenting with it in different recipes—I’ve made everything from peach cobbler French toast to cheesecake! And because I’m a huge cake lover, this Cinnamon Sugar Peach Cobbler Dump Cake was a no-brainer.

It’s incredibly simple to whip up, especially with the help of boxed cake mix to speed things along. Start by making your peach filling and spreading it in a baking dish. Next, dump the cake mix over the peaches, drizzle with melted butter, and sprinkle with cinnamon sugar. PEACH FILLING:

  • Peaches. Sliced + fresh. See below for a canned or frozen option!
  • Cane sugar + brown sugar. Ensure that it's organic for healthiest option.
  • Spices. Ground cinnamon, nutmeg + allspice.
  • Vanilla extract. A great addition of flavor and marries everything together. Always use pure vanilla and not the imitation flavor for the best results!
  • Lemon. Freshly-squeezed.

TOPPING:

  • Yellow cake mix. I love using Bob's Red Mill cake mix.
  • Salted butter. Melted.
  • Cane sugar. You can also sub this and the cinnamon with actual store-bought cinnamon sugar!
  • Ground cinnamon.

Do You Use Peeled or Unpeeled Peaches?

You'll want to use unpeeled peaches --- Believe it or not, keeping the skin on your peaches actually gives the cobbler cake more depth flavor and a beautiful color in the filling. And don't worry---the peach skins won't be hard and they actually soften greatly which still makes for the perfect bite!

How to Easily Peel Fresh Peaches

If you decide while making this peach cobbler dump cake that you'd prefer to peel the skins off your peaches----no worries! A great hack to do so is to gently lower a few peaches at a time (best to use a skimmer) into a pot of boiling water and leave them in fro 20-30 seconds before removing them and into an ice bath to stop the "cooking process". Then you should be able to peel them with no problem without the need for a knife or any tool.

Is it Better to Use Fresh, Frozen or Canned Peaches for Cobbler Dump Cake?

The best part about this peach cobbler dump cake is its versatility—you can use fresh, frozen, or canned peaches. If you decide to use canned peaches, you'll need about 3-4 cans of peaches to equal the amount of fresh peaches. You'll want to drain them well and pat them dry before adding to filling ingredients. Also, toss them in 1 teaspoon of cornstarch to ensure that the filling isn't too liquid-y when baking.

For frozen peaches, let them thaw completely and give them a good pat dry also. But if it’s summer and fresh peaches are in season, go for those—they’re the ultimate choice!

How Do You Soften or Rippen Peaches?

The best way to help to ripe hard peaches is to put them in a paper bag and leave them on the counter for a day. And if it still isn't softened, keep it in the bag for another 24 hours or so.

If there’s one dessert that screams summer and comfort, it’s this Cinnamon Sugar Peach Cobbler Dump Cake recipe. Imagine sweet, juicy peaches bubbling away under a golden, crispy topping with just the right amount of cinnamon sugar goodness. Ingredients

PEACH FILLING:

  • 8 cups sliced fresh peaches, organic (That's about 8 medium peaches)
  • ¼ cup organic cane sugar
  • ¼ cup organic brown sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • teaspoon ground allspice
  • 1 teaspoon vanilla extract
  • ½ lemon, freshly-squeezed

TOPPING:

  • 1 box yellow cake mix (I love using Bob's Red Mill cake mix)
  • 1 cup salted butter, melted (That's 2 sticks!)
  • ¼ cup organic cane sugar (You can also sub this and the cinnamon with actual store-bought cinnamon sugar!)
  • 1 teaspoon ground cinnamon

GARNISH:

Instructions

TO MAKE THE PEACH FILLING:

  • Preheat the oven to 375 degrees Fahrenheit and lightly grease a standard (9x13 inch) baking dish with butter or oil.
  • In a large bowl, add the sliced peaches. Toss together the sliced peaches, lemon juice, cane sugar, brown sugar, cinnamon, nutmeg, allspice, and vanilla, mixing until combined and peaches are fully coated.

ASSEMBLE + BAKE:

  • Pour the dry cake mix evenly over the top of the peach filling and then pour the melted butter over the top of the cake mix. NOTE: If there are a few spots that don't have butter, that's OK.
  • Finally, sprinkle the cinnamon sugar over the top of everything. NOTE: If making yours form scratch, simply mix together the sugar + cinnamon in a bowl until combined----then sprinkle.
  • Bake for 55-65 minutes (in the middle rack) or until the peach filing becomes bubbly and the top is golden brown (with little to no white spots). NOTE: You can leave it in for an extra 5-10 minutes if needed, but be sure to watch it so that it doesn't get too dark.
  • Remove the cobbler dump cake from the oven, slightly cool, and serve immediately with a scoop of your favorite ice cream, whipped cream, and/or caramel sauce!
