Energy bites are a super convenient way to fill our tastebuds with sweetness without the unhealthy sugars and additives. You can indulge on these little bites and not feel guilty at all. Besides, they are an awesome way to boost your energy, increase your fiber in take, gain other healthy nutrients, and enjoy a nice filling breakfast or snack in between your meals. Per usual, you can always mix & match your ingredients or make the necessary substitutions if preferred.
Also, because these little sweet treats are no-bake and include a lot of raw ingredients, you can store them for a few days (up to a week) which makes for a great long-term treat. All in all, these are a win, win in my opinion!
- 2 cups dry oats I used steel-cut gluten-free oats by RedMill
- 1 cup peanut butter I used the Justine's Natural brand
- 1/2 cup ground flax seeds OR already grinned flaxseed meal, which I used
- 1 cup semisweet chocolate chips
- 1/2 cup honey honey or agave nectar
- 2 Tablespoons chia seeds
- 1 Tablespoon vanilla extract
- 1/2 cup coconut flakes
Stir all ingredients together in a medium bowl until thoroughly mixed (I used my hands to make sure that all ingredients were mixed together well).
Cover and let chill in the refrigerator for 1/2 an hour to 1 hour (or place in freezer for 20 minutes & the refrigerator for the remainder of the time) so that it can harden a bit.
Once chilled, roll into balls of whatever size you would like. (Mine were about 1″ in diameter).
Store in a container (with a lid that’s airtight OR a ziplock bag like I did) and keep refrigerated for up to 1 week.
