It's all about using fresh, high-quality ingredients and keeping the flavors simple and rustic which if you're been following Orchids + Sweet Tea for a while you know I'm all about! This easy soup recipe is exactly that, simple and full of flavor!
How To Make Cozy Tuscan Ravioli Soup
Creating this dish is a breeze--- To make this Tuscan Ravioli Soup, you'll basically dive right into the recipe by sautéing the garlic, tomatoes + sundried tomatoes over the stovetop in a dutch oven. The ravioli pasta along with the remaining ingredients go into the pot for the soup. Let it simmer a bit more and wallah! Nice creamy results.
Ingredients
TUSCAN SOUP:
Extra virgin olive oil. Feel free to use your favorite high-quality EVOO. My fave tried and trusted brand is California Olive Ranch.
Garlic cloves. I prefer fresh, but you could substitute with garlic powder in a pinch.
Ravioli. I used cheese + spinach stuffed ravioli (You can use 2 packages for an extra bite; You can also use cheese stuffed ravioli)
Vegetable stock. Use store-bought low-sodium broth or make your own!
Organic all-purpose flour. Used for the thickening of soup. You can sub with GF flour for that option.
Heavy cream. I recommend organic–always! Of course, for a vegan option, just use full-fat coconut cream/milk.
Sundried tomatoes. Choose an organic bottle of sundried tomatoes or make your own roasted tomatoes.
Organic kale. Feel free to use your favorite greens!
Organic tomato paste.
Homemade Tuscan Blend. You can purchase my Tuscan Marry Me Blend for great ease and authentic flavor. (See how to make it below)
Cherry or grape tomatoes. Halved or whole.
Lemon juice. You can use store-bought or freshly-squeeze juice from an actual lemon.
Parmesan cheese. You could also use pecorino romano. For a vegan option, So Delicious Dairy-Free or Violife cheese shreds tastes great.

Creating your own special Tuscan blend is a simple and quick process, taking just a few minutes of your time. However, if you're in a rush or want an easy solution, you can always choose a quality pre-packaged option like my Tuscan Marry Me Blend. Here's what you'll need if you want to make your own + Feel free to customize to your liking!
1 Tbsp smoked paprika
2 tsps dried parsley
2 tsps dried basil
2 tsps dried oregano
1 tsp sea salt
1 tsp black pepper

In my experience with making many different types of soup and watching the adults around me make a TON of soup (it's a staple in the Jamaican culture), I've learned a few things along the way that can help you make really good soup, including this Cozy Tuscan Ravioli Soup---
Chop your veggies and ingredients into bite-sized pieces for greater ease when eating.
ALWAYS sauté your veggies, especially the garlic, onions, etc.
Make your own stock if you can or use water as your base with seasonings + herbs for a great taste. If using store-bought stock/broth, always purchase high-quality ones.
Let it simmer. While you might be tempted to cook your soup on high for a faster cook time, it's definitely BEST to let everything simmer and allow the flavors to "fuse" together slowly.
If adding dairy or an alternative, always stir it in last or during the final few minutes.
To thicken (if needed), always mix your thickener (flour, arrowroot, starch, etc.) in a small bowl with some of the hot broth from your soup before adding it to the entire pot of soup. This prevents lumps and gives you a nice creaminess.
How to Thicken Soup in General
While many soups are thickened for texture, what you use as a thickening agent is solely up to you. All in all, it depends on how you like it! Use 1 tablespoon at a time mixed with 1 tablespoon of water to dilute. Then pour the mixture into the soup, simmering for an additional few minutes to activate the thickener.
Some thickening agents you can use are:
Cornstarch (GF)
Arrowroot starch (GF)
Potato starch (GF)
All-purpose flour
What Kind of Ravioli Fillings Work for this Creamy Pasta
For this specific one-pot pasta recipe, I chose to use cheese + spinach stuffed ravioli. However, there are so many options (whether homemade or store-bought) that can help to elevate this entire dish based on the use of any of the following ravioli:

What Can I Use Instead of Sundried Tomatoes?
If you aren't the biggest fan of sundried tomatoes or just don't have them on hand, here are a few great alternatives for you to choose from so that you can still enjoy this delicious chicken gnocchi dish:
Leftovers can be stored in a tightly sealed container in the refrigerator for 2-3 days, for optimal freshness. Can also be frozen for 4-6 months. To defrost, simply place soup in the refrigerator overnight or at room temperature before reheating on the stovetop to serve.

1cuporganic kale, chopped
1-2Tbspsorganic tomato paste
1 ½TbspsTuscan Marry Me Blend(You can purchase my Marry Me Blend for authentic flavor or make this homemade as well---See Notes)
1teaspoonsea salt
2cupscherry or grape tomatoes, halved or whole
½lemon, freshly-squeezed
GARNISH:
Freshly grated parmesan cheese
Instructions
TO MAKE THE SOUP:
In a medium-sized dutch oven pot over medium high-heat, add the olive oil. Once heated, add the minced garlic and tomatoes, and sauté until translucent + fragrant, about 1-2 minutes. Add the Tuscan Marry Me blend, stirring until combined. Add the tomato paste and flour and continue to stir until combined.
Add in the vegetable stock, stirring frequently to avoid lumping until thickened. Add in the ravioli, tomatoes, lemon juice, heavy cream, and kale, stirring to combine. Let everything simmer for another 8-10 minutes or until the soup has thickened nicely and the ravioli are fully cooked through and tender. NOTE: When ravioli are cooked through, they'll float to the top and swell in size.
Remove from heat and serve immediately into prepared bowl(s), top with freshly-grated parmesan, and with a side of bread, if desired.
