Ya'll, I couldn't be more excited to share these little hand pies with you. Honestly, when I first thought about my next hand pie recipe, I didn't expect to come up with this idea. I know that you'd enjoyed my recent Broccoli Cheddar Hand Pies and I wanted to do something savory again, but with a real twist.
Thinking back, I've realized that while I do enjoy eating Brussels sprouts, I don't have many recipes on the blog that include them so I tested them out in these hand pies and MAN------I'm hooked! They're are SO good!
And if you're a parent with a picky eater (why, hello! I am), then you understand the importance of coming up with majorly unique and delicious ways to get those veggies in. With the Everything Bagel addition, if you or your family aren't true lovers of this, simple add a few herbs and seasonings (i.e. salt, black pepper, oregano, basil, thyme, parsley, garlic powder) to the tops instead and they're still just as great!
How to Make Everything Brussels Sprouts + Mozzarella Hand Pies
An easy appetizer brussels sprouts recipe that comes together easily with the oven and few short steps.
INGREDIENT NOTES
Things you need to know about some of the key ingredients in this roasted brussels sprouts + mozzarella dish.
Puff pastry. Feel free to use any puff pastry (including a vegan-friendly version) that you have on hand. I love using an organic version.
Brussels sprouts. To prepare the brussels sprouts for cooking, remove one outer layer of skin and I love to soak mine in vinegar and water for 10 minutes or so and then rinse (this eliminates any dirt or residue), then pat dry and cut in halves. If you’re not a fan of brussels sprouts, you can add roasted broccoli, asparagus, peas, spinach, or kale instead. Really any roasted veggie you love will work!
Everything Bagel Seasoning. I like to create my own sometimes or a use one of my favorite organic store--bought blends from Thrive Market.
Mozzarellacheese. This adds delicious cheesy umami flavor to this entire recipe.
Best Types of Cheese for these Hand Pies
Even though these hand pies are based on using mozzarella cheese, you can also switch things up and add a new flare in their flavor profile by adding any of the following:
Gruyère
Sharp or Mild Cheddar Cheese
Gouda
American cheese
STEPS TO MAKE A HOMEMADE EVERYTHING BAGEL BLEND
When it comes to the everything bagel blend, it’s all about the sesame seeds and if I’m not using a store-bought version, I definitely enjoy keeping it as original as possible with both white + black sesame seeds.
But, you can use one or the other if you don’t currently have both. Overall, this recipe makes ¼ cup, however, I love making a larger batch (by doubling or tripling the ingredients) and storing it in an airtight container for a longer period of time. Here are the ingredients that you need:
4 tsps white sesame seeds
2 tsps black sesame seeds
2 tsps poppy seeds
2 tsps garlic powder
2 tsps onion powder
1 tsp sea salt
Can I Make Vegan Hand Pies?
Yes! Making these hand pies entirely vegan and dairy-free means to simply substitute the cheese for dairy-free shreds (Violife has great options!), the puff pastry sheets with vegan-friendly sheets, and melted vegan butter in place of the egg wash.
Storage Suggestions
Store leftover hand pies in an airtight container at room temperature for up to 3 days. To serve, simply re-heat hand pies in the microwave for 30 seconds to a minute or via the oven or toasted oven until heated through.
Leftover hand pies can also be frozen for up to three months. To serve, defrost the pastry on the counter for a few hours to come to room temperature.
Can I Freeze Everything Brussels Sprouts + Mozzarella Hand Pies?
Yup! For longer storage–leftovers can be stored in the freezer. After they have baked and are completely cooled, simply place your hand pies onto a baking sheet (spaced apart) and freeze them for 2-3 hours. Once frozen, transfer them to a zip loc bag and reheat when ready to eat!

EVERYTHING BAGEL SEASONING BLEND:
4tspswhite sesame seeds

Instructions
TO MAKE THE EVERYTHING BAGEL BLEND:
In a bowl, add all of the ingredients and mix together to combine.
TO ROAST THE BRUSSELS SPROUTS:
Preheat the oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper. In a bowl, add the halved brussels sprouts along with the olive oil and seasonings: salt, black pepper, garlic powder, oregano, basil, thyme, mixing everything together until brussels sprouts are well coated.
Transfer seasoned brussels sprouts to the prepared baking sheet and bake for 15-20 minutes or until they are charred and crisp. Remove from oven and let cool before chopping them up into smaller bite-size pieces.
TO MAKE THE PUFF PASTRY:
Preheat the oven to 375 degrees Fahrenheit and line a baking sheet with parchment paper.
Remove pastry sheets from packaging and roll out unto a floured surface. Cut the pieces into 8 squares total (per package; 16 squares total for both). Place about 1-2 Tbsps of chopped brussels sprouts unto one square ad top with 2-3 cubed mozzarella cheeses. Lightly brush the edges with egg wash to create a nice seal and then cover with another square, gently pressing the edges down. Using a fork, carefully “crimp” around the edges and place on the baking sheet. Repeat until all squares are topped and you've made 8 hand pies.
Once all hand pies are laid flat on the baking sheet, gently prick a set of holes on the tops using a fork, lightly brush with egg wash, and sprinkle with Everything bagel seasoning until fully covered.
Bake in the oven 20-25 minutes, until golden brown and the cheese melts.
Once done, remove from the oven and let them cool for a few minutes (10 minutes or so) before serving.

Tips & Tricks
