I recently made some S’mores Overnight Oats and had some marshmallow fluff left over, so I knew I had to put it to good use. That’s how these Funfetti Marshmallow Cereal Bars came to be! They’re packed with crispy cereal and rainbow sprinkles, and they’re everything you want in a sweet treat—thick, soft, chewy, with just the right touch of vanilla. Perfect as a dessert or snack, and so fun to make!

I love making these for my boy—he gets so excited to help with the sprinkles! We usually mix in Cheerios + Lucky Charms for a fun twist on the classic 'Rice Krispie' treats. They come out so sweet, gooey, and tasty—perfect for sharing (or keeping all to ourselves. Haha). How To Make Funfetti Marshmallow Cereal Bars

Line a pan with parchment or foil—don’t forget a quick spray if you’re not using non-stick. In a bowl, mix up your cereals, marshmallow fluff, vanilla + sprinkles, and a pinch of cinnamon.

It’s going to get sticky, so gloves might come in handy! Press the mix into your pan, top with extra sprinkles, and let it chill in the fridge for about 30 minutes. No oven needed!

  • Cheerios cereal. You can use plain ones or honey nut flavor.
  • Lucky Charms cereal. You can sub with your favorite healthier marshmallow-infused cereal.
  • Jar marshmallow fluff. This is whats going to stick everything together!
  • Vanilla extract. A great addition of flavor and marries everything together. Always use pure vanilla and not the imitation flavor for the best results!
  • Sea salt. A little salt goes a long way in balancing the sweetness.
  • Rainbow sprinkles. For a pop of color + extra fun! I love using these natural sprinkles!
  • Ground cinnamon. Adds a warm, cozy touch to the bars.

Here’s a fun and colorful treat the kids will love—Funfetti Marshmallow Cereal Bars! Packed with Cheerios, Lucky Charms, and loads of marshmallow goodness, these bars are a blast to make and even more fun to eat. Perfect for snack time, lunchboxes, or just because!

Serves: 12 bars

Ingredients

CEREAL BARS:

  • 2 cups Cheerios cereal (You can use plain ones or honey nut flavor)
  • 2 cups Lucky Charms cereal (You can sub with your favorite healthier marshmallow-infused cereal)
  • 1 (7.5 oz) jar marshmallow fluff
  • 1 teaspoon vanilla extract
  • ½ teaspoon sea salt
  • ¼ cup rainbow sprinkles
  • Pinch of ground cinnamon

TOPPING:

  • Rainbow sprinkles (Just enough to cover the tops)

Instructions

  • Line a 9x9 baking pan with foil or parchment paper. NOTE: Be sure to coat the foil paper with a bit of spray if not using non-stick foil.

TO MAKE THE CEREAL BARS:

  • In a bowl, add the cereals along with the marshmallow fluff, vanilla, salt, sprinkles, and pinch of cinnamon, stirring everything together with a rubber spatula or wooden spoon. NOTE: I found it easier to work with my hands by wearing gloves to ensure that everything gets stirred together well.
  • Press the mixture into the prepped baking pan until even. Sprinkle remaining rainbow sprinkles atop bars and lightly press down. Cover with plastic wrap or foil and let it chill in the refrigerator for about 30 minutes or so.
  • Cut into bars and serve for a not too sweet treat!
  • Bon Appetit!
