How To Make Garlic Butter Salmon + Lobster in Creamy Lemon Parmesan Sauce 

For prep, we'll start by removing the shells from the lobster tails, then baking both the salmon + lobster. Afterward, we'll whip up the rich and creamy parmesan sauce. This dinner idea is perfect for those times when you're short on time but craving something a little fancier. (Because let's be honest, lobster screams fancy, right? Haha!)

Ingredients

SALMON + LOBSTER:

  • Salmon. I like to use wild-caught Sockeye salmon for a tastier flavor.
  • Wild lobster tails. It's such a nice succulent meat with a delicate flavor and firm texture.
  • Extra virgin olive oil. Feel free to use your favorite high-quality EVOO. My fave tried and trusted brand is California Olive Ranch.
  • Garlic herb butter. You can use a pre-made store-bought one or see my garlic herb butter recipe to learn how to make your own. (It's super easy + quick)

SAUCE:

  • Unsalted butter. You can also use Garlic herb butter for extra flavor.
  • Garlic cloves. Minced.
  • Heavy cream. I recommend organic–always! Organic Valley is my go-to brand!
  • Parmesan cheese. I love to freshly grate my cheese, however, you can use your favorite shredded brand---quality does matter!
  • Lemon. Freshly-squeezed.
  • Sea salt. To make the flavors pop!

What Is Sockeye Salmon?

Sockeye Salmon is also known as Kokanee salmon and sometimes just called red salmon. It is a wild Pacific fish that is a little bit smaller than most other types of salmon. Sockeye salmon has a very rich texture and tons of flavor.The meat of a sockeye salmon is lower in fat than farmed salmon and it is higher in vitamin D and omega-3 fatty acids.

Sockeye vs Atlantic Salmon

The main difference between the two: Wild sockeye salmon develop their robust qualities in a vast marine ecosystem, swimming thousands of miles over a lifetime in an epic hunt for food. This is in stark contrast to farm-raised Atlantic salmon, who are typically confined to a net pen — often situated in polluted, coastal waters — where they’re fed engineered pellets that can never truly replace a wild diet.

Of course, the other difference is in their taste: Atlantic salmon is less tasteful than Sockeye salmon and doesn't pack as much of a punch. Overall, Sockeye has more of a crab-like taste to it and is often considered firm in texture.

Can Sockeye Salmon Be Cooked From Frozen?

Yes! You can actually put your wild salmon right into the oven from the freezer. Add about 8-10 minutes to the cooking time to account for the cold temperature of the fish. I also like to loosely cover the salmon when baking from frozen, tenting it with foil to trap the moisture as it cooks a little longer.

How To Shop For Fresh Sockeye Salmon

I have a little secret for you about seafood: It is almost always frozen immediately after being caught. Freezing fish either right on the fishing boat or at the docks helps kill bacteria and prevent the delicate fish from spoilage. Even the "fresh" fish in the grocery store has usually been frozen and then thawed. So, unless you are lucky enough to live near a sockeye salmon breeding ground, you should skip the "fresh" fish section in your grocery store and go straight to the freezer section for your fish. The frozen sockeye salmon in the grocery store will cost less and it will be the same, high quality.

Ingredients

SALMON + LOBSTER:

  • 2 (4-6 ounces) wild-caught Sockeye salmon
  • 4 (6 oz.) wild lobster tails
  • 2 Tbsps Extra virgin olive oil
  • 4-6 Tbsps Garlic herb butter, softened

SAUCE:

  • 1 tablespoon unsalted butter (You can also use Garlic herb butter for extra flavor)
  • 2 garlic cloves, minced
  • 1 ½ cups organic heavy cream
  • cup freshly-grated parmesan cheese
  • 1 lemon, freshly-squeezed
  • ½ teaspoon sea salt

Instructions

PREP THE LOBSTER:

  • To prep lobster tails, slightly crack shell and remove most of lobster meat outside of shell without completely detaching shell from meat and remove any "grey lining", and rinse with water and vinegar to clean. Pat dry. NOTE: Slightly detaching meat from shells allows the lobster meat to fully cook through with shell blocking it.

BAKE THE SALMON + LOBSTER:

  • Preheat the oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
  • Add your rinsed and patted dry salmon and prepped lobster tails and drizzle with the olive oil + softened garlic herb butter, rubbing everything atop salmon and lobster until completely coated. Roast (on the top rack) for 15-20 minutes or until fully cooked through. NOTE: When done, salmon should "flake apart" when touched gently. Once lobster are completely cooked, they will turn light pink in color fully.
  • Remove from oven and let cool slightly before removing the meat entirely from the lobster shells and cutting them into medium-sized chunks or leaving them whole----whichever your prefer. Set aside with salmon.

TO MAKE THE SAUCE:

  • In a medium skillet over medium-high heat, add the butter until melted. Add the minced garlic and sauté until fragrant, about 1-2 minutes. Add the heavy cream, grated parmesan, lemon juice, and salt, stirring until combined. Bring to a boil and reduce heat to low and allow to simmer for 2-3 minutes until the sauce thickens a bit. Add the salmon and lobster and gently stir the sauce atop seafood until coated. Let simmer for another 1-2 minutes and remove from heat.
  • Serve immediately with your favorite cooked pasta, white rice, brown rice, coconut rice, etc.
  • Bon Appetit!

Tips & Tricks

  • STORAGE: Any leftovers can be kept in a tightly sealed container and refrigerated for up to 3-4 days.
  • GREENS: To add a bit more flavor to this dish, you can always feel free to add in your favorite greens such as spinach, broccolini, collards, or asparagus.
