You've likely all heard of the green goddess salad craze, and I've definitely jumped on the bandwagon, putting my own spin on the recipe by turning it into dips, salads, a Green Goddess Buffalo Chicken Bowl, and even a Green Goddess Mocktail. But I wanted to take it a step further and incorporate my Homemade Green Goddess Dressing into this Green Goddess Crispy Chicken Sandwich recipe!
I used my smashed cucumber salad recipe for that refreshing crunch factor. And the crispy chicken—it speaks for itself with that irresistible crunch. Add the sauce, sandwiched between two fluffy pieces of bread, and it's next-level deliciousness. The combination of textures is simply divine, and I guarantee you're going to love it!

How to make this sandwich gluten-free?
To ensure that this chicken recipe is completely Gluten-Free, simply substitute the breadcrumbs and cornflakes with GF-friendly ones. Also, you can substitute cornflakes with all-purpose flour for your favorite GF-friendly flour (i.e. GF All-purpose flour, 1-to-1 baking flour, etc.). Also, you can use arrowroot starch for a great GF-friendly option instead of regular cornstarch. Lastly, ensure that you use GF-friendly burger buns.
Can I make this ahead of time?
While the sandwich is best enjoyed fresh, you can prepare certain components in advance to make assembly easier. For example, you can make the chicken, green goodness sauce + cucumber salad ahead of time and store them in the refrigerator until ready to use. Assemble the sandwich just before serving to maintain its freshness and texture!

Pre-heat the oven to 400 degrees Fahrenheit and prep a large baking sheet lined with parchment paper and a wire rack for best results.
In a large bowl, add the chicken breasts (cut into sandwich sized pieces by trimming ends) and 1 TEASPOON OF EACH: sea salt, black pepper, garlic powder, smoked paprika, onion powder, thyme, basil, oregano, and dried parsley, tossing everything together until well coated. Let it sit for 5-10 minutes so that everything marinates. NOTE: It's always best to marinate overnight in the fridge.
In the bowl of the beaten egg and milk and whisk together until combined.
TO MAKE THE BREADED COATING:
In a separate large bowl, add the crushed corn flakes, breadcrumbs, and remaining 1 teaspoon of seasonings together and stir until combined.
In a separate bowl or plate, mix together the cornstarch and flour.
ASSEMBLE + BAKE:
Now, dip each chicken breast into the flour followed by the egg mixture (shaking off any excess) and then add it into the breadcrumb coating mixture-----tossing it around until the breast is well coated. Then lay the chicken breasts side by side onto the baking sheet with wire rack (about an inch apart). Repeat until all chicken breasts are coated.
Lightly brush or spray tops of chicken with olive oil or cooking spray and bake them for 30-35 minutes or until chicken breasts are fully cooked through and crispy on the outsides.

ASSEMBLE SANDWICHES:
To assemble, prepare your burger buns, top with crispy chicken breast, spoonfuls of smashed cucumber salad, and Green Goddess Dressing/Sauce. Serve with your favorite side----fries, sweet potato fries, salad, or whatever.
