If you’re a sandwich fan and love chicken, this Grilled Chicken Avocado Sandwich is calling your name! You know those times when you just crave a really GOOD sandwich? Well, this is it! With juicy grilled chicken, creamy avocado + homemade ranch dressing, it’s a total winner. After I shared the Green Goddess Crispy Chicken Sandwich a few weeks ago and saw how much you loved it, I knew I had to bring you more chicken goodness.

This sandwich is so versatile! I used parmesan for a cheesy kick, but feel free to swap in a dairy-free alternative if that’s your preference. I’ve included sun-dried tomatoes, but homemade herb-roasted ones would work just as well. And if you want to make it gluten-free, just switch out the bread! How To Make This Grilled Chicken Avocado Sandwich

Putting together this sandwich requires a bit of prep, but trust me, it's worth every step! You'll need to whip up the grilled chicken, prepare the green goddess sauce, and then assemble everything between your favorite choice of bread.

Ingredients

GRILLED CHICKEN:

  • Boneless chicken breasts. The star of the show. I like to use organic chicken for the best flavor and quality!
  • Extra virgin olive oil. Feel free to use your favorite high-quality EVOO. My fave tried and trusted brand is California Olive Ranch.
  • Seasonings. Sea salt, black pepper, smoked paprika + Italian seasoning.

SANDWICHES:

  • Bread. I love using honey oat bread, brioche bread or other rustic bread like sourdough, etc.
  • Microgreens. You can also opt for your fave greens such as lettuce, spinach, etc.
  • Mashed avocados. I love using Hass avocados.
  • Sundried tomatoes. Drained + sliced (You can also sub with my Roasted Herb tomatoes)
  • Shaved parmesan cheese. You can sub with dairy-free shaved parmesan for dairy-free option.
  • Vegan ranch dressing/sauce. You can also change up the sauce, see below for more options.

Serves: 2 sandwiches

Ingredients

GRILLED CHICKEN:

  • 2 boneless organic chicken breasts
  • 2 Tbsps Extra virgin olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning

SANDWICHES:

  • 4 slices bread (I love using honey oat bread, brioche bread or other rustic bread like sourdough, etc. )
  • microgreens (See Notes)
  • mashed avocados (You'll need about 2 medium Haas avocados)
  • ¼ cup sundried tomatoes, drained + sliced (You can also sub with my Roasted Herb tomatoes)
  • ½ cup shaved parmesan cheese (You can sub with dairy-free shaved parmesan for dairy-free option)
  • 1 cup vegan ranch dressing/sauce (See Notes)

Instructions

TO MAKE THE GRILLED CHICKEN:

  • Preheat the oven to 400 degrees Fahrenheit and line a small baking sheet with parchment paper.
  • In a bowl, add the chicken breasts, olive oil, salt, black pepper, smoked paprika, and Italian seasoning, stirring everything together until chicken is coated.
  • If you marinate your chicken overnight in the refrigerator, remove and let it sit at room temperature for 30-45 minutes before adding to prepared baking sheet and baking it for for 25-30 minutes or until fully cooked through. NOTE: When done, the chicken should look "dark" in color from the seasoning and crusted, but juicy + clear on the inside. Remove from oven and slice into "strip-like' chicken or chunks, if preferred.

TO MAKE THE DRESSING:

TO MASH THE AVOCADO:

  • In a bowl, add the insides of the avocado (once peeled + pitted) and using a fork, mash them until fully broken down. NOTE: There can be a few chunks visible, if desired.

ASSEMBLE THE SANDWICH:

  • On one side of 2 slices of bread, add the microgreens or your favorite greens followed by the sliced grilled chicken, mashed avocado, sliced sundried tomatoes and shaved parmesan. Then on the other bread, evenly spread the vegan ranch/dressing and top everything with this other bread, lightly pressing together and slicing in half, if preferred. Repeat until all sandwiches are made.
  • Enjoy with your favorite sides like chips, fries, etc.
