This Iced Vanilla Latte with Quinoa Milk is a healthy and light homemade coffee with nutty quinoa milk and coconut whipped cream to keep the drink dairy-free.
Instead of shelling out every morning at Starbucks or another coffee shop for a specialty coffee drink, I like to make my favorite drinks at home. That way, I can choose the sweetness level, the amount of caffeine, and use some of my favorite more hard-to-find dairy-free milks. This iced vanilla latte is one of my go-tos with a new favorite plant-based milk: quinoa milk! I think you'll love it too.
How to Make Vanilla-Quinoa Lattes
You'll need to start by making your own quinoa milk, since this tasty milk isn't available in most grocery stores. It's very easy to make at home using this how-to guide.
In addition, you'll need to sweeten and flavor your latte with homemade vanilla syrup.
Vanilla Syrup for Lattes
Here's how to make a delicious and flavor-packed vanilla syrup:
Brown sugar. You can also use organic cane sugar if you prefer.
Vanilla extract. Use the pure stuff for the best flavor
Filtered water. That's it!
Making the Latte
Once you have your quinoa milk and vanilla syrup, putting together your latte takes all of five minutes. You'll need:
Cold brew or iced coffee
Quinoa milk
Vanilla syrup

Can I Use a Different Kind of Milk?
Certainly! If you're not a fan of quinoa milk, try making a latte with one of these other popular nut milks:
Yes, to make this recipe hot, simply use hot espresso or coffee. And warm your milk in a milk frother or the microwave before hand. The syrup will dissolve right into the hot coffee.

Instructions
TO MAKE THE SIMPLE VANILLA SYRUP:
In a saucepan over medium-high heat, add together the brown sugar, water, and vanilla (whisking them to combine) and bring to a boil, about 1-2 minutes or until the sugar dissolves. Let cool.
MAKE THE LATTE:
To serve, fill ice into a 12 or 16-ounce glass and pour in the milk followed by the cold brew, and vanilla syrup, stirring them together until the mixture becomes a light color. Top with coconut whipped cream, and festive sprinkles, if desired.

WHAT PLANT-BASED MILKS ARE GOOD FOR THIS RECIPE? You can always use your fave or one of the following: Almond, coconut milk, homemade oat milk (froths/foams VERY WELL), homemade cashew milk, flax milk, potato milk, quinoa milk, etc.
HOMEMADE COCONUT WHIPPED CREAM: In the bowl of an electric mixer on medium-high speed, whip the chilled full-fat coconut milk (1 ½ or so cups), using the whisk attachment for 4-5 minutes, until fluffy peaks begin to form. **NOTE: When it begins to thicken after the first 2-3 minutes, gradually add in 1 tablespoon vanilla extract and a pinch of sea salt.*
