I’m all about turning dessert into breakfast, just like my S’mores Overnight Oats from last month! The other morning, I was hit with some serious nostalgia after reminiscing about my favorite childhood banana split ---- And I found myself craving it for breakfast. Haha, this is a judgment-free zone. So I decided to give it a healthier twist. That’s how my Nourishing Banana Split Breakfast Toast came to life! Trust me, it’s a delicious way to start the day!

This toast is loaded with berries, bananas, and Greek yogurt + more—so yummy, customizable, and super quick! I love overnight oats, but let’s be real, I don’t always think ahead. Haha. This is my go-to for a fast breakfast that pairs perfectly with my morning coffee. And the best part? It’s totally kid-friendly! I can serve one meal for the whole family instead of whipping up two or three different breakfasts—total win!

Banana Split Breakfast Toast is a fun, delicious spin on the classic dessert! It’s all about toasted bread topped with creamy yogurt, sliced bananas, and your choice of yummy toppings like fresh berries, coconut flakes, and more. It’s a sweet way to kick off your day while bringing back those nostalgic vibes!

How To Make Banana Split Breakfast Toast 

All you have to do is toast your bread—I love using a rustic sourdough—then layer on the toppings, and voilà!

Ingredients

TOAST:

  • Sourdough bread. Toasted (I like also using bread like ciabatta, challah, etc.)
  • Greek yogurt. Smooth (You can sub with dairy-free yogurt as well)
  • Strawberry or blueberry jam/preserves. To make your own jam, see my Strawberry Jam recipe
  • Ripe bananas. Peeled + sliced lengthwise.
  • Fresh berries. Blueberries, strawberry slices, blackberries or raspberries work great!
  • Coconut flakes. Toasted (See Notes!)
  • Chia seeds. You could also use flaxseed meal or hemp seeds!
  • Raw honey. Raw honey has better flavor, texture and is better for you (very high in antioxidants) than processed honey. I love the brand Nate's.

How To Make Toasted Coconut Flakes?

Okay, this is super easy! In a medium non-stick skillet over medium-high heat, add the coconut flakes. Stir them around for about 3-4 minutes until they’re golden and toasted. Just keep an eye on them so they don’t burn! Once they’re looking perfect, remove the skillet from the heat and let the coconut cool completely.

The Best Bread for Banana Split Breakfast Toast 

A crusty rustic bread is my fave bread for Banana Split Breakfast Toast. They are light and airy, so the toast is not too dense upon biting. Because of the large air pockets in the bread, they make for a lovely mouthfeel. Lastly, they have a heavy crust which helps to hold up toppings as well. Here’s the best breads:

How To Make Vegan/Dairy-free Banana Split Breakfast Toast

To make this breakfast toast vegan, simply choose a vegan Greek yogurt or your favorite dairy-free yogurt. Just double-check that your bread is also vegan. Then just swap the honey for vegan honey or go for maple syrup, date syrup or agave instead!

To make this recipe gluten-free, simply substitute bread with a GF-friendly bread and ensure that jam/preserves and yogurt are GF-friendly. 

What if I don’t have yogurt?

No problem! You can use nut butter, cottage cheese, or even whipped coconut cream as a tasty alternative.

Ingredients

TOAST:

  • 2 slices sourdough bread, toasted (I like also using bread like ciabatta, challah, etc.)
  • ½ cup Greek yogurt, smooth (You can sub with dairy-free yogurt as well)
  • 2 Tbsps strawberry or blueberry jam/preserves (To make your own jam, see my Strawberry Jam recipe)
  • 2 ripe bananas, peeled + sliced lengthwise
  • ½ cup fresh blueberries, strawberry slices, or raspberries
  • ½ cup fresh blackberries
  • ¼ cup coconut flakes, toasted (See Notes!)
  • 2 tsps chia seeds (See Notes!)
  • 1 tablespoon organic raw honey

Instructions

TO TOAST THE BREAD:

  • Preheat the oven to 350 degrees Fahrenheit. Butter or lightly drizzle olive oil atop both sides of each bread and add to a wire rack atop a baking sheet and toast until golden and crisp, about 5-6 minutes or so.

TO MAKE THE TOAST:

  • To make the toast, add a few spoonfuls of Greek yogurt atop each bread and spread evenly. Top with strawberry or blueberry jam/preserves, sliced bananas, fresh berries, coconut flakes, sprinkles of chia seeds, and a drizzle of honey.

  • GLUTEN-FREE OPTION: To make this recipe gluten-free, simply substitute bread with a GF-friendly bread and ensure that jam/preserves and yogurt are GF-friendly. 
  • TOASTED COCONUT: In a medium non-stick (10-inch) skillet over medium-high heat, add the coconut flakes and stir until golden and toasted, about 3-4 minutes or so. Remove from heat. Let cool completely.
  • GARNISH OPTIONS: Instead of chia seeds, you can garnish toast with flaxseed meal, hemp seeds, etc.
