I’m all about pineapple, as you might have noticed from my pineapple recipes! And when you add coconut water to the mix, you’ve got a drink that’s truly refreshing. This Refreshing Sparkling Pineapple Coconut Juice is perfect for any get-together—simple, family-friendly, and totally tropical.

What Does This Refreshing Sparkling Pineapple Coconut Juice Taste Like?

How To Make Sparkling Pineapple Coconut Juice

Peel + chop the pineapple into chunks, then make your simple syrup (instructions below). In a high-powered blender, combine the pineapple chunks, cooled syrup, and coconut juice. Blend on high until smooth. Strain the juice into a pitcher.

To serve, fill glasses with ice, pour in the juice (about ¾ full), and top with your favorite lemon soda, sparkling water, or ginger beer for a fizzy kick. If you prefer, you can enjoy this juice straight up without the fizz.

Ingredients

JUICE:

  • Whole pineapple. Make sure its ripe and ready!
  • Water. I use filtered.
  • Cane sugar. If you want to keep it sugar-free, you can use alternatives like stevia, monk fruit, or other sweeteners such as honey or agave.
  • Coconut water or blend. Using coconut blend gives a thicker texture in juice; I love Lakewood organics.
  • Lemon soda or ginger beer. For topping (You can also sub with sparkling water) The brand Olipop has some great healthy options.

How To Make Simple Syrup

INGREDIENTS:

  • Water.
  • Organic cane sugar. This will melt down to become a syrup .

TO MAKE THE SIMPLE SYRUP:

  • In a saucepan over medium-high heat, add together the water and sugar (stirring them to combine) and bring to a boil, about 1-2 minutes.
  • Reduce the heat to low and simmer for another 1-2 minutes or so. Remove from heat and let it cool completely.

Add-On Ingredients 

While this Sparkling Pineapple Coconut Juice is absolutely delicious as it is, if you're looking to mix it up here are some ideas:

  • Turmeric (paired with a pinch of black pepper for absorbency)
  • Manuka honey as sweetener
  • Fresh ginger root
  • Cinnamon
  • Chia seeds
  • Fresh mint leaves
  • Basil

Can I Add Alcohol?

Yes definitely! If you'd like to spruce things up with alcohol, feel free to add 1 ounce of whiskey, rum, vodka, etc. For a more "cocktail-feel" without the alcohol, I love using Ritual Zero Proof alcohol alternatives

Ingredients

JUICE:

  • 1 whole pineapple, organic
  • 1 cup water
  • ¼ cup organic cane sugar
  • 1 cup coconut water or blend (Using coconut blend gives a thicker texture in juice; I love Lakewood organics)
  • lemon soda or ginger beer, for topping (You can also sub with sparkling water)

Instructions

PREP THE PINEAPPLE:

  • Peel and chop the pineapple into chunks.

BOIL TO CREATE SWEETENER:

  • In a saucepan over medium-high heat, add the water and cane sugar and bring to a boil. Stir and continue to boil until sugar has dissolved, about 2-3 minutes. Remove from heat + let cool completely.

TO MAKE THE JUICE:

  • In a high-powered blender, add the chopped pineapple, cooled sweetener mixture, and coconut water or blend, blending on high-speed until full broken down and smooth. Strain juice into a pitcher.
  • To serve, add ice to glass(es), pour the juice atop ice (about ¾ths filled) and top with your favorite lemon soda, sparkling water, or ginger beer for a nice fizz. NOTE: You can enjoy this juice without any fizz as a fresh juice.
  • Sip and Enjoy!

Tips & Tricks

  • STORAGE: Keep any leftovers (without soda topping) in the refrigerator, tightly covered in your pitcher or in a sealed mason jar for up to 1 week. Best if consumed within a few days. Always shake well or stir before serving.
  • ADDITIONAL BOOST: To add a boost to make this juice more powerful, you can add turmeric (paired with a pinch of black pepper for absorbency), Manuka honey as sweetener, fresh ginger root, cayenne pepper, allspice, cinnamon, basil, chia seeds, etc. I would use about 1 teaspoon of any addition.
