Weeknight dinner can be a real struggle, right? I totally feel you on that one. It's just so tempting to stick with the same old, same old because it's familiar and easy. But every now and then, you gotta break out of that routine and add some spice to your life! Lately, I've been experimenting with homemade tortillas, and let me tell you, they've been a game-changer. I've made a TON of taco recipes, but then I had this lightbulb moment after cooking up a pan-seared steak ---- And just like that, the Ribeye Steak Burrito became a weeknight staple!

How To Make A Ribeye Steak Burrito

I kept the ingredients for this ribeye steak burrito recipe nice and simple, and the best part is, they're totally customizable to match your taste! Here's everything I used:

STEAK:

  • Pan seared ribeye steak. I use organic + grass-fed. (You can also use New York Strip Steak or Top Sirloin Steak) You'll want to slice the steak into 1-inch chunks for once cooked.

Best Tortilla for Burritos?

You have the option of using either corn or flour tortillas for this steak burrito recipe. I recommend opting for the larger burrito-sized tortillas as they are easier to fill and wrap. Keep in mind that flour tortillas are more stretchy, making them particularly convenient for stuffing with generous fillings. If you're feeling adventurous, you can always make your own tortillas--- then you can control the size.

How to Best Char or Warm Tortillas

To lightly toast tortillas, preheat the oven to 350 degrees Fahrenheit and place tortillas directly on the rack. Turn off the oven once heated and let tortillas warm for 2 minutes. Remove from oven. For char on a stovetop, pop one of the tortillas onto a gas burner until you begin to see a little smoke. Remove tortilla to rotate it onto opposite side until it’s lightly charred. Repeat until all tortillas are charred.

With the ribeye steak all set and ready to go, it's time to assemble. When it comes to toppings, I enjoy the vibrant, fresh, and sweet medley of ingredients. In this recipe, I've kept it uncomplicated by using classic fillings. However, feel free to let your creativity run wild and experiment with your favorite toppings!

How Do You Know When Your Steak Is Ready?

While some prefer to rely on the "feel" of the steak over time, I personally choose not to take any chances. I prefer using a meat thermometer to ensure my steak is cooked exactly the way I like it! The internal temp guide is:

  • Medium Rare (soft, dark pink inside): 130°–135°
  • Medium (soft, some pink inside): 140°–145°
  • Medium Well (firm a little pink inside): 150°–155°
  • Well Done (very firm, no pink inside): 160°–165.

Keep in mind that the meat's temperature will increase by 5-10 degrees during the resting period! You can learn more about beef safety + tips HERE!

Why You Should Always Let Steak 'Rest'

Allowing steak to rest after cooking is an essential step for MANY reasons:

JUICINESS:

Resting allows the juices within the steak to be redistributed. When you cook a steak, the heat causes the juices to move toward the center. Allowing the steak to rest gives these juices a chance to spread throughout the meat evenly, ensuring each bite is juicy + super flavorful.

TEMPERATURE EQUALIZATION:

Resting helps the temperature of the steak to even out. The exterior of the steak is hotter than the center after cooking. Resting allows the heat to move from the hotter outer areas to the cooler center, preventing the juices from escaping when you cut into it.

BETTER TEXTURE:

Resting allows the muscle fibers in the steak to relax. If you cut into a steak immediately after cooking, the fibers will contract, forcing the juices out and potentially resulting in a tougher texture. Allowing the steak to rest helps it retain its tenderness.

*It's generally recommended to let a steak rest for about 5-10 minutes before slicing.

7 Steps To Wrap A Burrito Perfectly Everytime

Wrapping a burrito perfectly every time takes a bit of practice with these tips you'll be a pro in no time!

Heat the tortilla slightly to make it more pliable. You can do this in a skillet for a few seconds on each side or in the microwave for a few seconds wrapped in a damp paper towel.

Place your fillings slightly off-center on the tortilla, leaving space at the edges to fold.

Fold the sides of the tortilla closest to the filling over the filling. This helps to contain the ingredients and prevent them from falling out.

Fold the bottom edge up, with the side edges folded in, start rolling the bottom edge of the tortilla up and over the filling, tucking it snugly underneath.

Roll + tuck --- Continue rolling the tortilla tightly until you reach the top edge. Use your fingers to tuck in any loose filling as you roll.

Seal the burrito --- Once rolled, press down gently on the seam to seal it. If needed, you can place the burrito seam-side down to keep it closed.

Wrap in foil or paper --- This is optional but to keep the burrito secure and make it easier to eat, wrap it in foil or parchment paper. This also helps to keep it warm.

Ingredients

STEAK:

  • 2 lbs. Pan Seared Ribeye Steak (You'll want to slice the steak into 1-inch chunks for recipe once cooked)

BURRITO:

  • 2 organic Burrito sized flour tortillas (You can also make your own tortilla with my
  • Your favorite shredded greens (You can use lettuce, kale, etc.)
  • ½ cup Cooked rice (You can use Basmati rice, Coconut rice, Brown rice, etc.)
  • Warmed black beans
  • Sour cream
  • Chunky salsa (You can make your own with my Pico De Gallo recipe)
  • Guacamole or cubed avocado (You can make your own with my Guacamole recipe)
  • Shredded cheese
  • Chopped fresh cilantro
  • Queso, optional (See my Vegan Queso recipe for a dairy-free option)

Instructions

TO MAKE THE STEAK:

TO ASSEMBLE THE BURRITO:

  • Prep all of the filling ingredients by warming and cooking them if needed.
  • Lay a flour burrito tortilla flat on a piece of foil. Place the rice, steak, black beans, salsa, Guacamole, shredded cheese, and sour cream (whatever ingredients you choose to use) in the middle of the tortilla. Carefully, fold the sides up, then roll it up front to back and wrap it with foil for an easier storage or to-go situation. Repeat for all burritos.
  • Enjoy your burrito with a side of Queso if desired or your favorite side like chips + Guac, etc.
