While I've got an abundance of appetizer recipes on Orchids + Sweet Tea there are times when I find myself in a pinch, unsure of what to make. That's when this Italian-inspired Roasted Garlic Olive Oil Dip always comes to the rescue—sometimes, simplicity is just unbeatable. Of course, I have some fancier dips like Spicy Restaurant Style Salsa, Healthy Green Goddess Salad Dip, and, of course, my much-loved Easy Garlic Herb Three Bean Dip. But today, I wanted to keep it super simple and easy for y'all. Indulge in the creamy delight of our Whipped Feta Pesto Dip—a fusion of tangy feta, aromatic pesto, and creamy goodness perfect for dipping or spreading. 

What makes this dip recipe a real gem is that it's not just limited to dipping—leftovers make for an excellent marinade for meats (If you love a garlic + chicken combo definitely try my Skillet Honey Garlic Baked Chicken Thighs) and veggies or a flavorful drizzle on salads, and more! How To Make Roasted Garlic Olive Oil Dip

Obviously, the star of this garlic dip is, well, the garlic—no surprise there! But what takes it to the next level is the process of roasting whole bulbs in the oven, also known as garlic confit. The magic happens effortlessly, with minimal ingredients making it a breeze to put together!

TO ROAST THE GARLIC:

  • Begin by preheating the oven to 400 degrees Fahrenheit and preparing a large piece of foil paper. Add each garlic bulb to the center of the foil paper, drizzle with olive oil and wrap tightly with foil paper.
  • Bake for 15-20 minutes or until the garlic bulbs are cooked through and super fragrant, tender, and browned on the edges. Let it cool a bit before removing the garlic from their bulbs + mincing them.

TO MAKE THE DIP:

  • In a bowl, add together the ingredients (including the mince roasted garlic), stirring everything together until combined. NOTE: If you need additional liquid----add 1 tablespoon more olive oil at a time.

  • Dried herbs: I like using oregano, basil + parsley!
