I’m all about a killer side dish, and this Roasted Zucchini with Parsley, Feta, and Hot Honey is seriously amazing. The fresh, vibrant flavors are perfect for summer, but honestly, they’re great all year round! The spicy sweetness of hot honey pairs beautifully with creamy feta + fresh herbs, making this dish ideal as a vegetarian (or vegan) side or even as a main course.

I’m totally obsessed with zucchini because it’s so flexible in the kitchen. It’s amazing how it can turn brownies and breads into something special, and it’s a lifesaver for whipping up quick sheet pan dinners. Roasted Zucchini Ingredients

Nailing the perfect flavor in this zucchini recipe is super easy with just a few main ingredients. Here's the lowdown on what you'll need:

  • Zucchinis. Medium-sized ones work best for even cooking times.
  • Extra virgin olive oil. Feel free to use your favorite high-quality EVOO. My fave tried and trusted brand is California Olive Ranch.
  • Spices + seasonings. Sea salt, black pepper, garlic powder, smoked paprika, dried thyme + dried basil.
  • Feta cheese. Crumbles.
  • Hot honey. Store-bought or homemade, if opting for store brought my favorite is Mike's Hot Honey. You can add more for intense flavor.
  • Fresh parsley. For garnish.

How To Cook Zucchini?

Take your rinsed + clean zucchini and slice them in half. Arrange the zucchini halves cut side up on a prepared baking sheet, leaving about an inch of space between each one. Drizzle the olive oil over the zucchini and generously sprinkle with your seasoning blend.

Bake + cook the Zucchini

Place the zucchini in the oven and cook for about 15 minutes, or until they are tender and caramelized. For extra caramelization, you can turn on the broiler for 3-4 minutes—just keep an eye on them to prevent burning.

Remove from the oven and transfer to a platter immediately. Drizzle with hot honey and sprinkle with feta cheese crumbles and chopped fresh parsley!

How to Make Your Own Hot Honey

If you don't have any hot honey on hand or you simply just want to make your own hot honey, no worries! It's really simple and only requires a few ingredients. You'll need: 

  • 1 cup raw organic honey (or regular honey)
  • 1 teaspoon red pepper flakes
  • 1 tablespoon apple cider vinegar.

To create your own hot honey, just bring to a simmer all ingredients in a saucepan and then remove it from heat and let it cool before adding in with the remaining sauce ingredients. Feel free to store any remaining hot honey in an airtight glass jar (straining red pepper flakes) if desired and keep stored for up to 6 months at room temp.

What Pairs Well With Roasted Zucchini with Parsley, Feta, + Hot Honey?

Roasted Zucchini with, Feta + Hot Honey pairs beautifully with a variety of dishes. It complements meats like baked chicken, steak, or fish, adds a fresh touch to pasta, and works wonderfully alongside salads, and grains like quinoa. For a vegetarian feast, serve it with roasted chickpeas or stuffed bell peppers.

Can I Make This Roasted Zucchini Recipe Dariy-free or Vegan?

Yes absolutely! To make this dairy-free, simply substitute the feta cheese for dairy-free feta crumbles (I love Violife or Follow Your Heart). To make this vegan, omit the honey and substitute with pure maple syrup, Agave, date syrup, or vegan honey (Check out my Amazon Shop for a great option).

Is Zucchini Healthy?

Absolutely! It’s low in calories, yet packed with vitamins A and C, which are great for your skin + immune system. Plus, it's high in fiber, which is perfect for digestion and keeps you feeling full. With its high water content, it’s super hydrating too. And if you’re watching carbs, zucchini’s low-carb profile makes it a great option.

How to store?

Leftovers can be stored in an airtight container (after cooling completely) in the refrigerator for up to 4 days. I don't recommend freezing leftovers due to the water content of zucchini.

How to reheat baked zucchini?

To reheat, add the zucchini to a lined baking sheet and in the oven at 400 degrees Fahrenheit until warmed through. 

Can I use other herbs besides parsley?

Absolutely! You can experiment with other fresh herbs like basil, thyme, or cilantro to mix up the flavors.

How do I know when the zucchini is done?

The zucchini is cooked when it’s golden brown on the edges and tender when pierced with a fork. This usually takes about 15-20 mins of cook time in the oven. NOTE: For extra caramelization, you can turn the oven to broil for 3-4 minutes, if desired. Just keep an eye on them so that they don't burn!

Ingredients

ZUCCHINI:

  • 4 medium zucchinis, organic
  • 2-3 Tbsps Extra virgin olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • cup feta cheese crumble
  • 2 Tbsps hot honey (You can add more for intense flavor)
  • chopped fresh parsley, for garnish

Instructions

  • Preheat the oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper or non-stick foil. NOTE: For the ultra crispiness on both side-----use a wire rack (sprayed with oil) atop the baking sheet.

MAKE THE SEASONING BLEND:

  • In a bowl, stir together the salt, black pepper, garlic powder, smoked paprika, thyme, and basil until combined.

PREP THE ZUCCHINIS:

  • Take your rinsed (and clean) zucchini and slice them in halves. Line each zucchini onto prepped baking sheet (cut side up), leaving 1-inch in between each one. Drizzle the olive oil atop the zucchinis and sprinkle with seasoning blend generously.

BAKE THE ZUCCHINIS:

  • Place the zucchinis in the oven and bake until tender and caramelized, about 15 minutes. NOTE: For extra caramelization, you can turn the oven to broil for 3-4 minutes, if desired. Just keep an eye on them so that they don't burn!
  • Remove from oven and add to a platter immediately, drizzling the tops with hot honey and sprinkle with feta cheese crumbles and chopped fresh parsley, if desired.
