When it comes to making Saturday dinners, I often find myself leaning more toward “laid-back” meals that can be enjoyed on a nice day, filled with back to back Lifetime movies! Who doesn’t love a good Lifetime movie or two or three, right? Haha! So for this dinner in particular, I chose to do something fun and hand-held, like Salmon burgers and Grilled Mexican Parmesan corn! Yum!
Normally, I buy my veggies and other main ingredients from Amazon Fresh, since it’s so convenient and easily delivered to your doorstep without having to rush to the Grocery store on the little spare time that you have, plus having a Toddler and doing store visits; I’m sure you can imagine how daunting that could be when your Toddler gets bored and no longer wants to be in one location in a stroller while you browse. Are there any Mamas who know what I mean? Yes, well, Amazon Fresh is super convenient and it’s more than easy to shop online (and it’s guaranteed fresh foods, sometimes even fresher than my local supermarket) and I love that they have a ton of organic items! So, in this batch of my groceries, I decided to try White Corn, which by the way doesn’t taste that different form regular corn. However, I do realize that it’s texture is more tender when grilled and I just love the beauty of it’s whiteness. Haha! It’s so funny because I didn’t even know that white corn existed before this! Coming from a Jamaican household, the only corn that I knew was Yellow! But there’s a whole new world outside of the regular veggies you can find locally! Also, I did get the organic version and had to literally remove it from it’s husk, but it wasn’t a tough process. Nothing that a little cutting, pulling, and peeling couldn’t fix anyway!
Per usual, I rinsed off the stringy-ness and rubbed them in about a tablespoon of butter before adding a pinch of sea salt + black pepper. Once you’ve dressed and seasoned them well, simply place them on a baking sheet and put them in a 425 degree Fahrenheit oven for about 25-30 minutes, tossing them around every 15 minutes (or so) to ensure that the grill marks are evenly around the corn. Add 2 Tablespoons of butter into a small bowl and melt. Then add 1 Tablespoon of Parmesan cheese to melted butter, mix well, and then top corn evenly about 2-3 minutes before removing it from the oven. Wallah! Super easy!

Trust me, you’ll fall in love with this Maple glaze the next time you make Salmon! It’s just sheer PERFECTION! It adds a nice sweetness to your Salmon without over-powering any other sauces that may be used. Once dressed, just place Salmon in the oven and let it bake for about 15 or so and in the meantime, gather all your other ingredients for your burger and chop them up if necessary. For the sauce, I tried to find the PERFECT one, because there just isn’t a burger without the right sauce. Since this is fish, the regular burger sauces just wouldn’t be a great fit in my opinion. That’s why I chose to make what I call a Garlic Aioli for my Salmon burgers and it was so GOOD! I felt like I could literally eat the sauce with a spoon by itself. Haha! I used actual garlic cloves and not the powdered version because you really get to taste the strong garlic flavor with the cloves. But don’t worry! The garlic cloves are finely minced, so you won’t be eating large chunks of garlic! What a great way to ruin your tastebuds of that happened, right? I’ve included the recipe below for you!
This sauce is perfect on your best Seafood burger and even fries! It's a sure winner!
- 3 Tbsps Mayonaise (I truly love the Just Brand Mayo, which is GMO-Free, Gluten-Free, Egg-Free, + Dairy-Free!)
- 1 Tbsp Lemon juice
- 1 Clove of gralic (finely minced)
- pinch Sea Salt
- 1 tsp Dried Parsley
Mix all ingredients together well and let chill in refrigerator until ready to use (if preferred chilled).
Once ready to use, top favorite Seafood burger in your own generous amount.
Salmon burgers and Mexican Grilled Parmesan corn is the best combination dinner for your family! It’s bursting with flavor, super quick + easy for those tired days when you don’t really feel like cooking, and did I mention that it is good?
