When I need a quick, crowd-pleasing side dish, this easy Seasoned Creamed Corn recipe always comes through! It’s so simple to make with a bag of frozen sweet corn, but it also shines as a fresh side when corn’s in season. It’s one of my favorites for the holidays, too—especially Thanksgiving or Christmas— along with some creamy mashed potatoes or candied yams. Sweet, creamy, and full of comfort!

In my experience, store-bought or canned creamed corn can be a bit tasteless, watery + bland, but this homemade version is buttery, rich, and has a nice chunky texture—just like it should! It’s a family favorite right up there with boiled corn on the cob or a fresh corn salad.

What Is Creamed Corn?

Creamed corn is a cozy side dish made from whole sweet corn kernels cooked in a creamy, buttery sauce that brings out their natural sweetness. Part of the corn is mashed or blended to create a thick texture while keeping some kernels whole for a bit of bite.

This dish has a lovely balance of creaminess and flavor that pairs perfectly with holiday meals or BBQs, often served alongside dishes like mashed potatoes, roasted meats, or Southern classics like fried chicken or cornbread.

How To Make Seasoned Creamed Corn

I love how easy this creamed corn recipe is! Here’s what you need to do: Start by melting some butter in a deep skillet over medium-high heat. Next, add in your flour + seasonings, whisking until everything is nicely blended and forms a paste. Slowly pour in the half & half, whisking it all together until it’s smooth and lump-free (about 2-3 minutes).

Then, reduce the heat to medium-low and stir in your corn—this can be fresh or frozen! Let it simmer for about 10-15 minutes, giving it a stir now and then. Serve it up alongside your favorite main dish, and enjoy!

Ingredients

CREAMED CORN:

  • Corn kernels. Fresh or frozen.
  • Butter. Use unsalted butter to control the flavor of the dish. For a dairy-free option, use vegan butter.
  • All-purpose flour. This is to thicken it up, if your gluten-free you can always use your fave GF flour instead.
  • Half & half. For a dairy-free option you can use Almond milk or full-fat coconut milk.
  • Seasonings. Sea salt, black pepper, garlic powder, onion powder, dried parsley, smoked paprika + a pinch of cayenne pepper, optional.

Both fresh and frozen corn work beautifully for creamed corn, so it’s up to what’s easiest for you!

  • Fresh corn. If it’s in season, fresh corn adds a juicy, sweet flavor that’s hard to beat. Just cut the kernels off the cob, and you’re set. It also brings that natural “pop” and texture that makes creamed corn extra special.
  • Frozen corn. Super convenient + available year-round, frozen corn still gives you great sweetness and texture. Plus, it saves time since you don’t have to cut the kernels yourself.

Can I Use Canned Corn?

Absolutely! If you’re using canned corn, just drain and rinse it well before adding it to the skillet. This is a quick and convenient alternative when fresh or frozen corn isn’t on hand, and it works just as well.

How Can I Make My Creamed Corn Thicker?

If it’s coming out thinner than you’d like, simmer it a bit longer to reduce the liquid, stirring frequently. Another trick is to blend about half the corn mixture, then stir it back in to make it even creamier!

Ingredients

CREAMED CORN:

  • 5 cups corn kernels (Fresh or frozen)
  • 2 Tbsps unsalted butter
  • 2 Tbsps organic all-purpose flour
  • 2 cups Half & half, organic
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley
  • ¼ teaspoon smoked paprika
  • Pinch of cayenne pepper, optional

Instructions

TO MAKE THE CREAMED CORN:

  • In a deep skillet over medium-high heat, add butter and let it melt. Once melted, add flour, salt, black pepper, garlic powder, onion powder, smoked paprika, parsley, and cayenne pepper, whisking until combined and "paste-like".
  • Slowly pour in the half & half, whisking frequently until lump-free, about 2-3 minutes. Reduce the heat to medium-low and add in the corn, stirring (using a wood spoon or spatula) to combine and let it cook for 10-15 minutes---stirring occassionally.
  • Remove from heat and serve with your favorite main dish, salad, etc.
