I’m all about turning desserts into breakfast, and after whipping up Biscoff overnight oats, I had to give s'mores a morning twist --- Enter S’Mores Overnight Oats. A bowl packed with gooey marshmallow fluff, rich chocolate + crunchy crushed graham crackers—just like a campfire treat but without the outdoor adventure. Haha.

If you know me, you know I'm a huge fan of overnight oats—they're my weekday staple! I love prepping them the night before and then I'm good to go for the next morning, especially when mornings can be a bit hectic with kids (If you know you know). And using classic s'mores ingredients takes them to another level of deliciousness!

What Are Overnight Oats?

Overnight oats are the easiest way to make oatmeal! Essentially, it's cold oatmeal, but what makes it special is just how delicious and convenient it is. You mix rolled oats with milk in this case we use dairy-free milk, add your favorite flavors like fruits or nuts....or in this case marshmallow + chocolate, and let it sit in the fridge overnight.

By morning, you've got a creamy, chilled oatmeal that's ready to eat. It's like magic in a jar! Plus soaking oats can make them easier to digest because it begins to break down the starches, making them gentler on your stomach!

How To Make S’Mores Overnight Oats

This S’Mores Overnight Oats recipe is seriously so easy! It only takes 10 minutes of prep time. Simply mix in all your ingredients, excluding the marshmallow fluff + crushed graham crackers to avoid sogginess. In the morning, just add your toppings, and you're good to go. You can even transfer it into a jar for a grab-and-go option!

Ingredients

SMORES OVERNIGHT OATS:

  • Rolled oats. Use GF-certified, if needed!
  • Almond milk. You can use your fave plant-based milk, if desired.
  • Ground cinnamon. It's a nice warming spice that goes perfectly with the other flavors.
  • Vanilla extract. A great addition of flavor and marries everything together. Always use pure vanilla and not the imitation flavor for the best results!
  • Pure maple syrup. You can also use honey.
  • Marshmallow fluff. Gives a gooey, marshmallowy element that makes the oats taste like S’Mores.
  • Graham crackers. Adds a crunchy, slightly sweet component; choose GF ones for a gluten-free version.
  • Melted chocolate. Provides a rich, indulgent chocolate layer that brings the S’Mores theme to life. For the overnight oats batter, you can use cocoa powder, but be sure to warm it with 2-3 Tbsps of milk to ensure that it's velvety and stirs in the oats well.

TOPPINGS:

Can I Eat Overnight Oats Hot?

That’s totally up to you! You can have these overnight oats hot, lukewarm, or cold! Whatever floats your oat boat! If you warm it up, keep in mind it will thicken up a bit so add a little extra of your favorite plant-based milk if you like the texture a little less thick.

Ingredients

OVERNIGHT OATS:

  • 1 cup organic rolled oats (Use GF-certified, if needed!)
  • 1 cup Almond milk (You can use your fave plant-based milk, if desired)
  • 2 Tbsps melted chocolate or syrup (You can also use cocoa powder; See Notes!)
  • ¼ teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 2 Tbsps pure maple syrup
  • 1 cup marshmallow fluff
  • ¼ cup crushed Graham Crackers

TOPPINGS:

  • Marshmallows
  • Chopped chocolate
  • Crushed Graham Crackers
  • Melted chocolate, for drizzle

Instructions

MAKE THE OATS:

  • Add the rolled oats, milk, melted chocolate, vanilla, maple syrup, and cinnamon, stirring everything together until combined and smooth.

REFRIGERATE OVERNIGHT:

  • Tightly cover bowl with plastic wrap and refrigerate overnight (or at least 8 hours).

ASSEMBLY:

  • To serve (hot or cold), add half the amount of oats to a bowl or mason jar and then a few spoons of marshmallow fluff followed by crushed Graham Crackers, drizzles of melted chocolate and the remaining oats.
  • Top with 1-2 spoonfuls of marshmallow, crushed Graham Crackers and drizzles of chocolate.
  • Bon Appetit!

  • WHAT PLANT-BASED MILKS ARE GOOD FOR THIS RECIPE? You can always use your fave or one of the following: Almondcoconut milk, homemade oat milk (froths/foams VERY WELL), sesame milk, homemade cashew milk, flax milk, potato milkquinoa milk, etc.
  • SERVING: To make additional overnight oats, simply double or triple ingredients, depending on need.
  • COCOA POWDER OPTION: For the overnight oats batter, you can use cocoa powder, but be sure to warm it with 2-3 Tbsps of milk to ensure that it's velvety and stirs in the oats well. I find that this works best than just adding it in without "liquifying" it.
