So, part of how I take care of myself is by prepping breakfast ahead of time. Overnight oats or chia pudding are my go-to because, let's face it, mornings can be hectic! But with spring here, I'm all about sneaking strawberries into everything I make. That's why this Strawberry Coconut Chia Seed Pudding is my latest obsession! Trust me, the combo of strawberries and coconut? It's pure magic.

Chia seed pudding is a winner for its health benefits + the convenience factor—you can prep it the night before and wake up to a ready-made breakfast. But if you've got a bit of time to spare, those chia seeds can soak up liquid in just 15 minutes. Plus you can use any milk you fancy—I'm a coconut milk fan, but almond, oat, or cashew are equally delicious. And let's not forget about the flavor possibilities!

What Is Chia Seed Pudding?

Chia seed pudding is a delicious + nutritious dish made by soaking chia seeds in a liquid until they swell and develop a pudding-like consistency. Typically, the liquid used is a type of milk, such as almond milk, coconut milk, or dairy milk, but other liquids like fruit juice or yogurt can also be used. The soaked chia seeds become gelatinous and create a creamy texture similar to traditional pudding. You can then add all your fave flavors + toppings.

How To Make Strawberry Coconut Chia Seed Pudding

Making this coconut strawberry chia pudding is fun and easy because these little chia seeds do all of the work for you. As they sit, they absorb liquid and firm up into a creamy and fluffy texture, which means that it's similar to a "set it and forget it" kind of recipe.

And the best part about this recipe is that it doesn’t need to rest overnight to be ready to serve. After you mix everything together, it’s ready to serve after just 15 minutes ---although you can make these overnight if you prefer.

Ingredients

CHIA PUDDING:

  • Chia seeds. The star of the show! You can find these in the nuts and seeds section of you local grocery store.
  • Pure maple syrup. You can swap it out for agave, vegan honey or regular honey if you're not vegan.
  • Full-fat coconut cream or milk. The richness of full-fat coconut milk is what really puts this chia pudding into dessert territory. If you'd rather keep the pudding lighter, you can use light coconut milk or another plant-based milk option.
  • Vanilla extract. I find the brand Nielsen-Massey to be amazing and of such good quality!
  • Fresh strawberries. You could also use frozen or even strawberry jam if you don't have any fresh ones on hand.

How to Make Chia Pudding Overnight

To make chia pudding in advance or overnight is fairly simple. Follow the recipe steps and then tightly cover the bowl with plastic wrap and refrigerate overnight (or at least 8 hours). Remove the bowl from the fridge when ready to use and assemble the chia pudding per usual. You may want to add a dash of milk if it's consistency is too thick.

Can I Use Other Types of Milk?

Absolutely! If you’d like to switch things up with the type of plant-based milk that you use—–that’s totally fine! The world of plant-based milk is constantly expanding. From the classics like coconut milkcashew milk, soy milk and almond milk, we now have delicious options like oat milk, and even potato and quinoa milk.

Chia Seed Health Benefits

Perhaps the best health benefit of chia seeds is how rich they are in omega-3 fatty acids. These are the healthy fats that our bodies need but do not produce on their own. Omega-3s help to reduce inflammation and may fight free radicals, reducing the risk of chronic disease.

In addition, chia seeds can be added to almost anything. Sprinkle them on your sandwich, add some to your morning smoothie, or scoop a tablespoon into your cereal. No matter how you eat them, chia seeds are extremely beneficial to your diet!

What Is The Best Milk To Chia Seed Ratio?

For a chia seed pudding that's creamy but not too thick, a good starting point is about ¼ cup of chia seeds for every cup of milk. If you like it thicker, add more chia seeds; for a thinner consistency, add less. Play around until you find the perfect ratio that suits your taste buds!

Serves: 2 servings

Ingredients

CHIA PUDDINGS:

  • ½ cup chia seeds
  • 4 Tbsps pure maple syrup
  • 2 cups full-fat coconut cream or milk
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, halved

OPTIONAL TOPPINGS:

  • Granola
  • Fresh strawberries, halved
  • Chia seeds, for garnish

Instructions

TO MAKE CHIA PUDDING:

  • Add all ingredients to a medium-size bowl, stirring together until combined.
  • Let mixture sit at room temperature or in the fridge for 10-15 minutes or until it begins to thickened yet still becomes creamy. Stir slightly.
  • To serve, add a few of the sliced strawberries to the bottom of a cup or mason jar followed by: ½ cup of chia pudding and top with granola and additional fresh strawberries, if desired. Repeat for each serving.
