But with spring here, I'm all about sneaking strawberries into everything I make. That's why this Strawberry Coconut Chia Seed Pudding is my latest obsession! Trust me, the combo of strawberries and coconut? It's pure magic.
Chia seed pudding is a winner for its health benefits + the convenience factor—you can prep it the night before and wake up to a ready-made breakfast. But if you've got a bit of time to spare, those chia seeds can soak up liquid in just 15 minutes. Plus you can use any milk you fancy—I'm a coconut milk fan, but almond, oat, or cashew are equally delicious. And let's not forget about the flavor possibilities!

Typically, the liquid used is a type of milk, such as almond milk, coconut milk, or dairy milk, but other liquids like fruit juice or yogurt can also be used. The soaked chia seeds become gelatinous and create a creamy texture similar to traditional pudding. You can then add all your fave flavors + toppings.
Making this coconut strawberry chia pudding is fun and easy because these little chia seeds do all of the work for you. As they sit, they absorb liquid and firm up into a creamy and fluffy texture, which means that it's similar to a "set it and forget it" kind of recipe.
And the best part about this recipe is that it doesn’t need to rest overnight to be ready to serve. After you mix everything together, it’s ready to serve after just 15 minutes ---although you can make these overnight if you prefer.

To make chia pudding in advance or overnight is fairly simple. Follow the recipe steps and then tightly cover the bowl with plastic wrap and refrigerate overnight (or at least 8 hours). Remove the bowl from the fridge when ready to use and assemble the chia pudding per usual. You may want to add a dash of milk if it's consistency is too thick.

For a chia seed pudding that's creamy but not too thick, a good starting point is about ¼ cup of chia seeds for every cup of milk. If you like it thicker, add more chia seeds; for a thinner consistency, add less. Play around until you find the perfect ratio that suits your taste buds!
