You might’ve caught wind of the "Marry Me Chicken" trend, and I've definitely jumped on board with my own versions like Tuscan Marry Me Chicken, and even a Southern twist with Marry Me Shrimp + Grits. But I wanted to create a vegetarian/vegan option that’s just as delicious. Enter this Tuscan Marry Me Butter Beans recipe—seriously, it's that good. My husband loved it so much, he was practically ready to propose again! Haha.

It’s creamy, cheesy, and super hearty, and you can have it ready in just 15 minutes in one pot! You can easily make it dairy-free, vegan + gluten-free, too. I love pairing it with fluffy rice, garlic bread, or mashed potatoes. It’s my top pick for a quick weeknight dinner, and everyone in my family loves it.

OK you might be wondering about the name “Marry Me Butter Beans.” It’s inspired by the viral Marry Me Chicken recipe you might have seen on TikTok, which claims that the dish is so irresistible, that it might just get someone to propose! Haha. I get why—it’s that good! I put my own spin on it with some extra flavors, and it turned out amazing. Trust me, this dish is a total winner!

What is Marry Me Beans Made of?

You're guaranteed to fall in complete love with this Marry Me Butter Beans recipe---trust me! Traditionally, 'Marry Me Chicken' consists of chicken breasts, parmesan cheese, sundried tomatoes, and basil.

However, for this vegetarian rendition, I chose to add butter beans to replace the chicken with a nice Tuscan-style twist to things by adding my homemade tuscan blend, garlic, freshly-squeezed lemon juice, tomato paste, cooking wine, and fresh tomatoes, for a rich, flavorful main course.

How To Make 'Marry Me' Butter Beans

First, get your Tuscan blend ready, whether it's homemade or store-bought. In a pot or skillet, combine the seasoning with sundried tomatoes + tomato paste. Then stir in heavy cream, veggie stock, lemon juice + white wine. Simmer for a couple of minutes, whisk in Parmesan until melted and thickened. Finally add in some chopped kale + drained butter beans, simmer for 5-6 minutes until beans are tender!

Ingredients

BUTTER BEANS:

  • Butter beans. I used canned that were drained + rinsed (You can use dry butter beans and soak them; See Post for further details + other White Bean options)
  • Butter. Use unsalted butter to add additional flavor + fat to the sauce. For vegan/dairy-free option, use vegan butter.
  • Garlic cloves. You can never have too much! I recommend using 4 cloves to infuse the sauce with flavor.
  • Sundried tomatoes. This adds a rich jammy tomato flavor.
  • Tomato paste. This is my secret flavor enhancer and the thing that gives this dish some color. 
  • Tuscan seasoning blend. See below for how to make your own! (You can also use a store-brought option)
  • Heavy cream. I recommend organic–always! I use Organic Valley. Of course, for a dairy-free option, just use full-fat coconut cream/milk.
  • Vegetable stock.Use store-bought low-sodium broth or make your own!
  • White cooking wine. You can omit or sub with additional veggie stock.
  • Lemon. Freshly-squeezed.
  • Kale. Chopped and de-stemmed.
  • Parmesan. I love to freshly grate my cheese, however, you can use your favorite shredded brand---quality does matter! For a dairy-free option, So Delicious Dairy-Free or Violife cheese shreds taste great.

How To Make Your Own Tuscan Seasoning Blend

Just toss all your ingredients into a bowl and give it a good mix until everything’s nicely combined. It’s that easy!

Ingredients

  • 1 Tbsp smoked paprika 
  • 2 tsps dried parsley
  • 2 tsps dried basil
  • 2 tsps dried oregano
  • 1 tsp dried thyme
  • 1 tsp garlic powder 
  • ½ tsp dried rosemary
  • 2 bay leaves

Yes, you can definitely use dried beans instead of canned ones! Just keep in mind that dried beans need to be soaked and cooked before you add them to the dish. To use dried beans, soak them overnight or use the quick soak method, then cook them until tender. Once they're ready, you can add them to the recipe as you would with canned beans. It’ll take a bit more time, but the flavor is totally worth it!

Can I Use Other Types Of Beans?

Absolutely, you can use other types of beans if you prefer or if that's what you have on hand! While butter beans are great for this recipe, you can substitute them with beans like cannellini, great northern, or even chickpeas. Just keep in mind that different beans might slightly alter the texture and flavor of the dish, but they’ll still be delicious.

NOTE: If you’re using a firmer bean, you might need to adjust the cooking time to ensure they’re tender and well-incorporated into the sauce.

What Can I Use Instead of Sundried Tomatoes?

If you aren't the biggest fan of sundried tomatoes or just don't have them on hand, here are a few great alternatives for you to choose from so that you can still enjoy this delicious creamy chicken dish:

These butter beans are so tasty, you might just want to eat them on their own! But since it’s a bit saucy, I love pairing it with garlic bread or, if I’m in the mood for something extra, grilled cheese croutons. Of course, there are plenty of other great sides you can serve with it too, like:

Can I Make Marry Me Butter Beans Dairy-free/Vegan?

Yes absolutely! To make this sauce dairy-free, simply use vegan butter instead of the regular butter. Then swap the cream with full-fat coconut milk or coconut cream. And use your favorite dairy-free shredded cheese or nutritional yeast instead of parmesan. 

What White Wine is Best in Marry Me Butter Beans?

I tend to use a lot of white cooking wine, which is easiest for me. However, I do occasionally add quality white wine to my dishes and I recommend using a dry white wine.

A dry white wine will add the right amount of acidity rather than sweetness, which will better compliment your dish like this Creamy Tuscan 'Marry Me' Benas. In general, any of the following dry white wines work great in this dish:

Pinot Grigio, Pinot Gris, Sauvignon Blanc, Pinot Blanc, and dry sparkling wines.

Any leftovers can be kept in a tightly sealed container and refrigerated for up to 3-4 days. To reheat, it's best when done in the oven, microwave, or on the stovetop. You'll need to add a bit of heavy cream or chicken stock to re-create the creaminess of the sauce when heating it up. Stir in the added liquid and it should become creamy again. 

Can i add more greens?

Yes! To add a bit more flavor to this dish, you can always feel free to add in your favorite greens such as spinach, broccolini, collards, or asparagus. 

What can i do with leftover tuscan blend seasoning?

Any leftover tuscan blend seasoning can be stored in a ziplock bag or jar for later use or used as garnish. 

What’s the best way to reheat leftovers?

Reheat gently on the stove over low heat, stirring occasionally. You can also use a microwave, but stir halfway through to ensure even heating.

How do I adjust the consistency of the sauce?

If you prefer a thicker sauce, let it simmer longer to reduce and thicken. For a thinner sauce, add a bit more vegetable stock or cream until you reach your desired consistency.

Is this dish gluten-free?

Tuscan 'Marry Me' Butter Beans are a dish so delicious, you might just want to pop the question! Creamy, savory, and packed with vibrant Tuscan flavors, these beans make for a perfect creamy side or a hearty main. Completely Vegetarian. Dairy-free Option.

Ingredients

HOMEMADE TUSCAN BLEND:

  • 1 tablespoon smoked paprika 
  • 2 tsps dried parsley
  • 2 tsps dried basil
  • 2 tsps dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder 
  • ½ teaspoon dried rosemary
  • 2 bay leaves

BUTTER BEANS:

  • 2 (15 oz.) cans butter beans, drained + rinsed (You can use dry butter beans and soak them; See Post for further details + other White Bean options)
  • 2 Tbsps unsalted butter
  • 4 garlic cloves, minced
  • ½ cup organic sundried tomatoes
  • 1 tablespoon organic tomato paste
  • 2 tsps Homemade Tuscan blend
  • 1 cup organic heavy cream
  • ½ cup organic vegetable stock
  • 3 Tbsps white cooking wine (You can omit or sub with additional veggie stock)
  • ½ lemon, freshly-squeezed
  • 1 cup chopped kale, organic
  • ½ cup freshly-grated parmesan + more for garnish

Instructions

TO MAKE THE TUSCAN BLEND:

  • In a bowl, add together the ingredients and mix until combined.

TO MAKE THE CREAMY TUSCAN 'MARRY ME' SAUCE:

  • In a medium skillet, add the butter until melted.
  • Add in 1-2 Tbsps tuscan blend seasonings and stir until well combined. Add in the sundried tomatoes and tomato paste, stirring until combined.
  • Reduce the heat to medium-low and slowly add in the heavy cream, veggie stock, lemon juice, and white wine, stirring until combined. Let it slightly bubble for 1-2 minutes and then add in the grated parmesan, whisking until fully melted and sauce thickens, about 2-3 minutes.
  • Add in the chopped kale, stirring until combined followed by the drained butter beans. Let everything simmer for 5-6 minutes or until the beans are tender and easily mashed slightly.
  • Remove from heat once done.
  • To serve, enjoy these butter beans with your favorite side (i.e. rice, mashed potatoes, veggies, garlic bread, etc.). Garnish with a bit of grated parmesan, if desired.
