Lately, I’ve been loving acai, so I thought, why not mix the two? These Vegan Blueberry Acai Mini Muffins are a new fave because they’re so easy to whip up + bake in no time. Plus, they’re perfect for breakfast or as a snack. Seriously, who doesn’t love a fresh batch of muffins?

What Is Acai?

Acai (pronounced ah-sigh-ee) is a small, dark purple berry from the Amazon rainforest that’s packed with flavor + nutrients. It's like nature’s little superfruit, bursting with antioxidants, vitamins, and healthy fats. Whether blended into a smoothie bowl or enjoyed in baking acai adds a tasty, health-boosting punch to your meals!

How To Make Vegan Blueberry Acai Mini Muffins

Baking these blueberry acai muffins is a breeze! You'll start by making 'vegan buttermilk' with almond milk—(See below on how to make dairy-free buttermilk---- It's super easy!). Then, just mix up all your wet and dry ingredients, and let the oven do its thing until they turn out absolutely perfect!

Ingredients

  • All-purpose baking flour. Provides the base + structure for the muffins. I use Bob's Red Mill or King Arthur.
  • Baking powder. Acts as a leavening agent to make the muffins rise.
  • Sea salt. Enhances the overall flavor by balancing sweetness.
  • Arrowroot starch
  • Acai Powder. I use Navitas Organics.
  • Almond milk.  (You can use whole milk or your favorite plant-based milk): Provides moisture to the cake. Learn how to make your own homemade almond milk!
  • Apple cider vinegar. This will be used for making our vegan buttermilk.
  • Coconut oil. Adds moisture and richness.
  • Pure maple syrup. For natural sweetness.
  • Vanilla extract. I  find the brand Nielsen-Massey to be amazing and of such good quality!
  • Blueberries. You can use fresh or frozen blueberries. For frozen blueberries, be sure to toss in flour first to allow the batter to bake better without a ton of excess moisture.

How To Make Vegan 'Buttermilk'

Here are some tips to ensure your muffins come out perfectly every time:

MEASURE CAREFULLY!

Take your time with measurements to ensure that your muffins turn out just right—precision is key.

Mix Gently

Mix the batter until the ingredients are just combined to prevent overmixing, which can lead to dense muffins.

Blueberry Distribution

Distribute the blueberries evenly throughout the batter for a balanced burst of blueberry goodness in every bite.

Fill Thoughtfully

When filling your muffin cups, aim to fill them about two-thirds full. This allows the muffins room to rise and expand during baking without overflowing or creating overly domed tops.

Rotate the tray halfway through

Show your muffins some love by rotating the muffin tin halfway through the baking process. This helps achieve an even golden brown color on all sides.

How to Know If Your Baking Powder + Baking Soda Are Fresh

Baking is such a science, but more importantly, certain ingredients like your leaveners (aka baking powder + baking soda) need to be completely fresh so that your muffins (and other baked goods) fully rise + bake through nicely.

BAKING SODA HACK:

Add 1 teaspoon baking soda with ¼ cup vinegar or lemon juice in a bowl and if it's fresh, the mixture should "bubble/fizz". If no bubble/fizz is present, then your baking soda needs to be replaced.

BAKING POWDER: 

Add 1 teaspoon baking powder with ¼ cup hot tap water in a bowl and if it's fresh, the mixture should "bubble/fizz". If no bubble/fizz is present, then your baking powder needs to be replaced.

Absolutely! If you’d like to switch things up with the type of plant-based milk that you use—–that’s totally fine! The world of plant-based milk is constantly expanding. From the classics like coconut milkcashew milk, soy milk and almond milk, we now have delicious options like oat milk, and even potato and quinoa milk.

How to store?

Refrigerate for up to a week and slightly warm each muffin in the oven or microwave when serving; Can also be stored, tightly sealed at room temperature for up to 5 days.

Can I make These muffins gluten-free?

To make these muffins GF, I recommend using a GF Flour Blend (Bob’s Red Mills has a great version!). **NOTE: If the muffin mixture is too ‘thin + runny’, simply add additional GF flour, ¼ cup at a time.**

Can i make regular muffins instead of mini?

Yes!  This recipe will make 12 standard muffins if desired.

Can i freeze these muffins?

Yes --- Allow them to cool completely, wrap them individually or in batches, and store them in an airtight container in the freezer for up to three months.

How do I know when the muffins are done baking?

Insert a toothpick into the center of a muffin; if it comes out clean, they’re done. They should also be golden brown on top.

What can I use if I don’t have acai powder?

No worries! You can omit the acai powder entirely or substitute it with a bit of pomegranate or berry powder for a similar effect. If you prefer, you can also just make regular blueberry muffins without it

These Vegan Blueberry Acai Mini Muffins are a deliciously easy treat packed with fruity flavor + vibrant nutrients. Perfect for a quick breakfast or a pick-me-up snack!

Cook Time: 25 minutes
Total Time: 30 minutes
Serves: 24 Mini Muffins

Ingredients

MINI MUFFINS:

  • 2 cups organic all-purpose flour
  • cup organic cane sugar
  • 2 tsps baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon sea salt
  • Pinch of ground cinnamon
  • 2 tsps Acai jam
  • 1 teaspoon vanilla extract
  • 1 ¼ cups Almond milk (You can use your fave plant-based milk)
  • 1 tablespoon apple cider vinegar
  • ¼ cup Extra virgin olive oil (You can sub with melted vegan butter or coconut oil)
  • 1 cup fresh blueberries

Instructions

TO MAKE DAIRY-FREE BUTTERMILK:

  • Add the Almond milk and apple cider vinegar together in a small bowl, stirring together until combined and letting it sit for 5 minutes until it becomes "slightly thickened" and activated.

TO MAKE THE MUFFINS:

  • Preheat your oven to 375F. Lightly grease or line the wells with liners for your mini muffin pan.
  • In a bowl, add the flour, baking powder, baking soda, sugar, cinnamon, and sea salt and mix together until combined. Add in the milk-ACV mixture, oil, Acai jam, and vanilla, mixing together until combined. NOTE: DO NOT OVER-MIX!
  • Fold in the fresh blueberries.
  • NOTE: The batter should look moist, but thick where it's 'scoop-able' but not easily poured. If way too thick, add 1-2 Tbsps more milk. If too runny, add more flour, 1 tablespoon at a time.
  • In the prepared muffin pan, add about 1 teaspoon or so of batter to fill each muffin cavity ¾ths of the way to avoid over-baking past the brim.
  • Bake muffins for 15-20 minutes or until the centers come out clean. Once fully baked through, remove from oven and let the muffins cool in the pan before removing.
  • To serve, enjoy mini muffins along with your favorite coffee, tea, or a glass of plant-based milk.

Tips & Tricks

  • STORAGE: Leftovers can be tightly sealed in the refrigerator for up to 5 days. Can be frozen for up to 2 months in a freezer safe bag.
  • MUFFIN SIZE: This recipe makes 24 mini muffins. However, you can make 6 Jumbo muffins OR 12 standard muffins, if desired.
  • OIL: Instead of olive oil, you can also use melted butter, coconut oil or vegetable oil, if preferred.
  • SWEETENER: If you choose to opt out of cane sugar, you can always substitute with brown sugar, coconut sugar, pure maple syrup, Agave, or Date syrup as well. If you decide to use a liquid sweetener, be sure to reduce the milk by the same amount used for sweetener.
  • BLUEBERRIES: If using frozen blueberries, be sure to lightly toss them in 1Tbsp of flour or arrowroot starch before adding them to batter. This reduces any excess water from the blueberries and allows bread to cook thoroughly.
  • GLUTEN-FREE OPTION: To make these muffins GF, I recommend using a GF Flour Blend (Bob’s Red Mills has a great version!). NOTE: If the muffin batter is too ‘thin + runny’, simply add additional GF flour, ¼ cup at a time. Always, start with reducing milk to ½-¾ cup to start and work your way to 1 cup depending on batter consistency.
