Vegan Rustic Banana French Toast with Caramelized Banana + Strawberry. What comes to mind when you read these words? This couldn’t possibly be breakfast, right? But yes! It is breakfast and a great vegan breakfast dish at that. If you’re anything like us (my guys + I), then you’re a huge fan of anything decadent for breakfast. I thoroughly enjoy pancakes and waffles (and so does my little guy!), meanwhile my husband loves french toast. So, you could only imagine how excited he was to know that we’d be having his favorite thing for breakfast, even with our new diet still in tact, right?
Lo and behold, I was able to make a nice thick batter using non-dairy milk (coconut milk) and pureed bananas. It made for a nice coat over each slice of bread and although it was a bit sticky when frying it (I suggest spraying Pam or lightly greasing the pan), it was salvageable after I transferred each french toast to the oven to fully cook through. Meanwhile, I began the caramelizing process for the bananas and added a few slices of fresh strawberries for a nice balance of sweet and tart. FYI, you can also caramelize the strawberries with the bananas if you’d like to keep things interesting. Overall, this recipe was too amazing for words. I would recommend using sourdough bread, since it does a nice job of soaking up the banana batter as well as crisping up very nicely around the edges. It also adds a real rustic feel to the dish. This recipe is light and super easy to do and it will surely please those taste buds first thing in the morning with a side of a nice cup of coffee or tea.

- 4 slices sourdough bread
- 1 medium ripe Banana
- 1/2 cup coconut milk (You can also use Almond milk if preferred)
- 2 Tbsps organic maple syrup
- 2 Tbsps flour (I used gluten free baking flour)
- 1/2 tsp vanilla extract
- 1/4 tsp nutmeg
- pinch of sea salt
- 1 medium ripe banana (sliced)
- 2 Tbsps brown sugar (make sure that it is Vegan approved)
- 2 Tbsps coconut milk (You can also use Almond milk if preferred)
- 1 tsp cinnamon
Blend all the French Toast Batter ingredients together and transfer to a medium bowl.
Heat a skillet over medium heat and spray with Pam or add olive oil.
Place bread slice in the batter for 2 seconds, then flip and soak for another 2 seconds. Remove from the batter and place in the hot skillet.
Cook for about 4 to 5 minutes per side or until nicely brown on each side.
Transfer each cooked bread slice to baking sheet and place in the oven at 350 degrees Fahrenheit and let cook through for about 5 minutes.
Combine banana slices, sugar and non-dairy milk, and cinnamon in a skillet over medium heat. Cook until the mixture thickens. about 6 minutes. Stir occasionally.
Serve over french toast, drizzle a bit of maple syrup, and add fresh slices of strawberry (if desired). Bon Appetite!
