Why Vegan Southern Peach Cobbler?

When it comes to Southern recipes, I'm always excited to share them with you! Of course, if you've been an avid reader of Orchids + Sweet Tea, then you know that I'm a Southern Girl at heart (born + raised), so these recipes are some of my favorites to create!

As you may know, we Southerners usually go big or go home when it comes to food and flavor. This Crispy Oven Fried Chicken, BEST Southern Baked Mac and Cheese, and My Grandma's Baked Southern Banana Pudding are great examples of this...We aren't afraid of flavor, AND in fact, we can't live without it. And this recipe for Vegan Southern Peach Cobbler is no exception. It may be dairy-free and fully vegan, but that doesn't mean it lacks flavor. In fact, this skillet cobbler is a summertime dessert that my whole family (vegan and non-vegan) loves. And I think yours will too.

Vegan Southern Peach Cobbler Ingredients

Biscuit Topping

First, find the following ingredients for the Cinnamon Biscuits on your cobbler:

  • All-purpose flour. I always use organic flour from Bob's Red Mill because it's certified vegan.
  • Baking powder + baking soda. This is essential to help your cobbler topping rise. 
  • Brown sugar + Cane sugar. Again, choose organic that's vegan certified!
  • Cinnamon + nutmeg. These two dried spices add a delicious warming note to every bite of cobbler. 
  • Vegan butter. Use your favorite brand. If you're avoiding soy, make sure it's soy-free.
  • Dairy-Free buttermilk. Feel free to use different plant-based milk + apple cider vinegar or lemon juice. For nut-free, soy, hemp or oat milk are all great options.

Peach Cobbler Filling

Here is everything you will need for your creamy spiced peach filling.

  • Sliced peaches. You can use fresh or frozen or canned peaches, which means this is a year-round recipe! If you use frozen fruit, dust the peach slices in a few tablespoons of flour before adding them to the recipe. This helps absorb some of the excess moisture on the frozen fruit. 
  • Brown sugar. I use Sugar in the Raw, which is certified vegan. 
  • Arrowroot starch. This is a great thickener for vegan recipes. You can also use tapioca flour, cornstarch, or more flour instead. 
  • Maple syrup. Make sure it's pure maple syrup, not the fake stuff! 
  • Cinnamon, nutmeg and allspice. For more warming flavors!
  • Vanilla. Make sure you use real vanilla extract for the best flavor
  • Vegan butter. Again, check for soy-free and/or nut-free if you have an allergy.

How to Make Vegan Southern Peach Cobbler

If you're wondering how to pack all of the classic Southern flavors and textures in a  dessert without any dairy or eggs, here's what you need to know. 

First things first--Preheat the oven to 400 degrees Fahrenheit and lightly grease a medium 10-inch skillet or standard baking dish with vegan butter.

MAKE THE BISCUITS:

  • In a large bowl, add together the flour, baking powder, baking soda, sugars, cinnamon, nutmeg, and salt, whisking everything until combined.

  • Add in the COLD butter and using a pastry blender (or two forks), blend in the butter into the dry ingredients until everything looks 'peas-like'.
  • Add the 'buttermilk' and stir everything together using a rubber spatula until just combined and wet enough. NOTE: DON'T OVER-MIX!

MAKE THE PEACH FILLING + ASSEMBLY:

  • In a large bowl, toss together the sliced peaches, maple syrup, brown sugar, arrowroot, cinnamon, nutmeg, allspice, and vanilla, mixing until combined and peaches are fully coated. Place the peaches mixture into the prepared skillet, evenly spreading everything out. Add pieces of COLD vegan butter in between peaches, tucking them in slightly.
  • Using a spoon (or large ice cream scoop), scoop 2 Tbsps of biscuit dough at a time and place them unto peaches, about 1-inch apart. You may flatten then with your hands a bit by pressing them down as you go.
  • Lightly brush biscuits with a bit of vegan wash and bake for 35-40 minutes or until biscuits are golden brown and peaches filling is bubbling through. NOTE: Your filling should be 'thickened' and not watery. Remove the cobbler from the oven and serve immediately with a scoop of your favorite dairy-free ice cream or CocoWhip!

The Best Vegan Egg Wash

As you may know, using an 'egg wash' is important when it comes to biscuit toppings,
and with this vegan peach cobbler, it's no different. Of course, since this peach cobbler is vegan, we can't use regular beaten eggs as an egg wash. However, here are great alternatives:

Aquafaba (liquid from canned chickpeas) ---- just lightly brush some unto your biscuit topping for a nice golden look.
Almond milk + Agave syrup --- believe it or not, but mixing the two together works just like regular egg wash would.
Melted vegan butter ---- just a light brush of melted vegan butter goes a long way!

Do You Use Peeled or Unpeeled Peaches for Cobbler?

To peel or not to peel, that is the peachy question! When it comes to cobbler, it's all about personal preference. If you prefer a silky smooth texture, go ahead and peel those peaches to create a flawless filling. But if you're all about that rustic charm and a little extra chew, leave the skin on for some added pizzazz. Either way, your cobbler will be a scrumptious delight that'll have everyone asking for seconds—peel or no peel!

How to Easily Peel Fresh Peaches

If you decide while making this peach cobbler that you'd prefer to peel the skins off your peaches----no worries! A great hack to do so is to gently lower a few peaches at a time (best to use a skimmer) into a pot of boiling water and leave them in fro 20-30 seconds before removing them and into an ice bath to stop the "cooking process". Then you should be able to peel them with no problem without the need for a knife or any tool.

Is it Better to Use Fresh or Canned Peaches for Cobbler?

The great thing about peach cobbler is that you can totally use fresh, frozen, or canned peaches to create this magical dessert. However, if it's peach season and the summer, it's always best to go with fresh ones!

How Do You Soften or Rippen Peaches for Cobbler?

The best way to help to ripe hard peaches is to put them in a paper bag and leave them on the counter for a day. And if it still isn't softened, keep it in the bag for another 24 hours or so.

How to Store + Reheat Leftover Peach Cobbler

Store any leftovers in a tightly covered container or glass dish covered and refrigerated for 2-3 days before the topping begins to get mushy. To reheat, simply add leftover peach cobbler to a preheated oven of 375 degrees until warmed through.

This one-pan dessert is so easy to make. And it will be gone before you know it. Here are some more delightful ways to serve and enjoy the Vegan Southern Peach Cobbler:

Can I Make This Peach Cobbler Recipe Gluten-free?

Yes! To make biscuits GF, simply substitute All-purpose flour for 1 ½ cups of Almond or Coconut flour and ½ cup of Oat flour OR GF 1:1 Baking flour (Best option). Bob’s Red Mill has great options in these types of flour. Follow the remainder of the recipe.

How Do You Keep Cobbler From Getting Soggy?

This goes back to the use of cornstarch or arrowroot. Ensuring that you use a good amount of starch on your peaches helps to ensure that the filling isn't soggy or too runny. It helps to create a nice thickened sauce and perfectly tender peaches.

How Long To Cook Frozen Peaches for Vegan Peach Cobbler Recipe?

If you're using frozen peaches instead of fresh or canned ones, always remember to dust them in flour prior to adding them to the recipe. Secondly, you'll need to cook frozen peaches slightly longer for about 50-60 minutes total, but the steps (baking them first) is still required.

Why Won't My Peach Cobbler Cook?

If your peaches are too ripe and soft, then they might produce too much juice, which causes your cobbler to be a lot more mushy and runny. To avoid this, it's best to ensure that your peaches are firm to the touch.

Why Is My Peach Cobbler Not Cooked In The Middle?

Overall, this is usually due to an incorrect temperature or bake time. It's always best to ensure that your oven is preheated and that you bake your peaches for 20-25 minutes first. This helps to aid in a fully cooked-through cobbler in the end.

Can I Make Cobbler Ahead of Time?

This recipe is best served fresh. Alternatively, you can make and shape the biscuits and make the filling. Keep them separately and assemble and bake just before serving. The unbaked biscuits can be stored in an airtight container in the fridge for up to three days or frozen for up to three months. The peach filling should be stored in the fridge for up to three days.

Ingredients

COBBLER TOPPING:

  • 2 cups organic all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ¼ cup organic brown sugar
  • ¼ cup organic cane sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon sea salt
  • 6 Tbsps COLD vegan butter, cut into pieces or chunks
  • ¾-1 cup  'Dairy-Free Buttermilk' + 2 Tbsps! (Almond milk + 1 tablespoon ACV or Lemon Juice!)

PEACH FILLING:

  • 10-12 medium fresh peaches, sliced (See Notes!)
  • ½ cup organic brown sugar
  • 1 tablespoon arrowroot starch or cornstarch
  • 2 tsps ground cinnamon
  • 1 teaspoon ground nutmeg
  • ½ teaspoon ground allspice
  • 1 teaspoon vanilla extract
  • ¼ cup COLD vegan butter, cut into pieces or chunks
  • ¼ cup pure maple syrup

VEGAN EGG WASH:

  • 2 Tbsps Almond milk
  • 1 teaspoon Agave syrup

Tips & Tricks

  • STORAGE: Like many dishes, you can store any leftovers in a tightly covered container or glass dish and refrigerated for 2-3 days. 
  • GLUTEN-FREE OPTION (BISCUITS): To make biscuits GF, simply substitute All-purpose flour for 1 ½ cups of Almond or Coconut flour and ½ cup of Oat flour OR GF 1:1 Baking flour (Best option). Bob's Red Mill has great options in these types of flour. Follow the remainder of the recipe.
  • USING FROZEN OR CANNED PEACHES: When using frozen or canned peaches instead of fresh ones, always toss them 1-2 Tbsps of flour before adding them to the recipe or other ingredients.
  • STACRH/THICKENER: If you don't have or don't want to use Arrowroot starch, you can always use Tapioca Flour, regular Cornstarch, or flour instead. Either substitution will help to thicken the mixture just fine.
  • SLICED PEACHES: In this recipe, I enjoy leaving the skin on after rinsing my peaches thoroughly, however, you can always free to peeled before slicing.
  • BISCUIT TOPPING: If you'd like to make your biscuit topping 'thinner' and not with thick biscuits, simply reduce the topping ingredients to half the amount.
