Did you know that this Tuesday (2/27) is National Strawberry Day? And then on Friday (3/1) we have National Peanut Butter Day! It seems like we should probably be celebrating both of these fun food holidays to make the week a little bit more exciting.
I also wanted to add a few recipes that use wintery produce. Yes, there is produce that is fresh and in season in the winter, despite the cold! Things like Brussels sprouts, cabbage, grapefruit, pears, and lemons are all true February foods. So, let's be sure to use them while they are around! This week's recipes will help you do just that.

I wanted to share the joys of making breakfast at night. I know, I know, it sounds crazy! But I absolutely love prepping breakfast at night. That way, when I wake up in the morning, I have a perfect, homemade meal ready to go!
There are plenty of delicious breakfast recipes that you can make at night. Overnight oats are definitely a favorite of mine but casserole bakes are also fantastic to prep in advance. They heat up so well and are perfect for feeding a crowd!

When making breakfast in advance, make sure it is a recipe that will heat up in the morning easily (if it should be served hot!). Choose recipes that can be quickly put together- no one wants to start a huge baking project after already making dinner! Also, make sure you choose a recipe that makes enough for everyone in your family. Everyone wants homemade food in the morning!
Oh, and don't forget to prep some coffee for yourself. Whether that is setting your coffee pot to auto brew on a timer or getting a dairy-free iced mocha latte prepped the night before, coffee is always essential to breakfast. Get ahead, make your breakfast at night and your whole day will be better for it!
