Herb Roasted Tomatoes [Quick + Easy]

These Herb Roasted Tomatoes are a burst of flavor that’ll liven up any meal! Imagine juicy tomatoes caramelized in the oven, seasoned with your favorite herbs, garlic + a drizzle of olive oil. They’re super simple to make but bring so much goodness to the table—perfect as a side, tossed with pasta, on pizza, or even piled onto toast. The possibilities are endless! Vegan, Dairy-free + Gluten-free.

Ingredients

TOMATOES:

  • 2 lbs. smaller tomatoes (I like to mix grape + cherry tomatoes)
  • 2 Tbsps Extra virgin olive oil
  • 2-3 tsps On Everything All-Purpose Blend (You can purchase my On Everything All-Purpose Blend for authentic flavor or make your own blend----See Notes)
  • 1 teaspoon smoked paprika, optional
  • 1 teaspoon sea salt
  • 4 fresh thyme sprigs, optional
  • 3 garlic cloves, minced

Instructions

PREP + SEASON THE TOMATOES:

  • Cut your tomatoes into halves or leave a mix of whole and halved tomatoes. In a bowl, add the tomatoes along with olive oil, All-Purpose Blend, smoked paprika, and salt, mixing everything together until tomatoes are coated.

TO ROAST THE TOMATOES:

  • Preheat your oven to 400 degrees Fahrenheit and prepare a baking sheet by lining it with parchment paper.
  • Add the seasoned tomatoes unto the baking sheet (in a single layer) and add thyme sprigs and garlic cloves all around. Bake for 25-30 minutes or until tomatoes are charred, wilted, and tender. Remove and let cool slightly.
  • Add roasted tomatoes to your favorite pasta, salad, or as a side dish. NOTE: You can always turn these roasted tomatoes into sauce by following my How to Make Homemade Tomato Sauce recipe!

Notes

  • STORAGE: All leftovers (once fully cooled) can be stored in an airtight container and refrigerated for 3-4 days.
  • HOMEMADE ALL-PURPOSE BLEND: 1 teaspoon sea salt, 1 teaspoon black pepper, 1 teaspoon garlic powder, 1 teaspoon dried oregano, 1 teaspoon dried thyme, + 1 teaspoon dried parsley.
