Ingredients

SAUCE:

  • 4 lbs. fresh ripe tomatoes (You can also use two 28oz. cans of peeled tomatoes; You can also roast the tomatoes for more flavor by following my Herb roasted tomatoes recipe!)
  • 2 Tbsps Extra virgin olive oil
  • ½ yellow or white onion, finely chopped
  • 1-2 Tbsps tomato paste, organic (Depending on depth of tomato flavor + color desired)
  • 1 teaspoon sea salt
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • Pinch of garlic powder

Instructions

PREP THE TOMATOES:

  • Begin by peeling + roughly chopping the tomatoes.

TO MAKE THE TOMATO SAUCE:

  • In a medium 10-inch skillet over medium-high heat, add the olive oil until heated. Add in the chopped onions and sauté frequently about 1-2 minutes until fragrant and translucent.
  • Add the tomatoes (or roasted tomatoes), tomato paste, salt, black pepper, smoked paprika, oregano, basil, and garlic powder, stirring to combine. Bring to a boil before reducing the heat to low and allowing everything to simmer, stirring occasionally.
  • Let everything simmer (uncovered) for about 40-45 minutes, mashing the larger pieces of tomatoes using a wooden spoon when stirring occasionally. Once desired consistency and thickness has been met, remove from heat and add salt to taste. NOTE: If the sauce becomes too thick---feel free to add ¼ cup of water or stock to help thin out sauce.
  • Enjoy with your favorite pasta, meat dish, sandwich, etc.
  • Bon Appetit!

Notes

STORAGE: Any leftovers can be kept in a tightly sealed container and refrigerated for 3-4 days. For longer storage---the sauce can be canned + preserved for up to 1 year or frozen for up to 3-4 months. When freezing, be sure to let the sauce cool completely before adding portions to freezer-safe bags.
