Simple Blueberry Compote

Ingredients

BLUEBERRY COMPOTE:

  • 2 cups fresh blueberries, organic
  • 2 Tbsps blueberry jam/preserves
  • 2 Tbsps organic cane sugar
  • 2 Tbsps water
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • Pinch of ground cinnamon, optional

Instructions

TO MAKE THE COMPOTE:

  • In a saucepan, add the blueberries, sugar, cinnamon (if using), blueberry jam/preserves, vanilla, water, and lemon juice, stirring until combined and blueberries are coated. Let them sit for about 5 minutes or so---until they begin to release their juices. Turn on the heat to low and continue to stir so that you can scrape down the sides of the pot if needed.
  • Let everything simmer for about 10-15 minutes, stirring frequently. Once blueberries begin to soften, continue stirring and begin to mash the blueberries until fully broken down. NOTE: Continue to stir frequently to avoid burning. Mixture should begin to thicken a bit as the blueberries become more mashed and softened.
  • Remove from heat.
  • Serve + enjoy as needed.

Notes

STORAGE: Leftover compote can be refrigerated and stored in the fridge for up to two weeks in an airtight container or sterilized mason jar.
